Last night's dinner was really yummy. A home made Chipotle bowl with rice and beans, salsa, daiya and avocado. I served with with a tortilla since I'm too much of a spazz to roll a decent burrito that actually stays together. After this meal I put the rest of my Daiya in the freezer because a) I've been eating it too much lately and b) It seems to be lasting forever! Seriously the bag just won't end!</div>

Today I took a ton of time to get a lot of fruit ready for smoothies for the week. I really want to get back into the habit of drinking smoothies every day and being prepared is key. I added 4 more bags of cherries to my other two in the freezer (I'm going to make these last!) as well as some strawberries. I had the bananas already and just added them to the pile so you could see how much fruit I have ha! I also have half a bag of frozen blueberries as well as some frozen pineapple. I think I'm set on smoothies for a while!</div>

So I have a question. I just tried to upload another photo and it said that I'm out of space in my Picasa account or something. I didn't even know I had a Picasa account and when I clicked to get details it said I had 5 GB of drive space that I wasn't using. I'm confused I guess and if I don't upgrade does that mean I can't upload any more photos at all? Has this happened to any of you, and if so did you just pay to upgrade? Please let me know, I'm so confused! </div>

Happy Saturday :) I hope you are all enjoying the day. I'm getting ready to head out on my last day of work before one day of freedom! I know it's hit or miss on whether or not I post on a day that I work a wedding but I had something fun to share with you so here I am!<br />

I mentioned last week that it was my friend's birthday and that I had put together a relaxation kit for her. Included in that was two little packets of face mask powder, tea bags (special bags that brew in cold water and make iced tea! She said they were great and very refreshing!), a plastic to go cold cup (to hold said iced tea), face and body creams, home made trail mix (in a mason jar obviously) and a bottle of wine. I was going to make her a batch of cookies but as you know I worked every day and barely had 10 minutes to breathe so I just couldn't. Since I'm working with her today (I'm assisting someone else but she is the second photographer on the job) I decided to push myself to make them even though I was exhausted.<br />

I also had to show you this yummy meal. I wanted to eat the last of my tofu so I can move on from this soy frenzy I've been on and I figured why not go big? ;) I made a tofu scramble with tons of spinach and then topped it with Daiya. I covered the pan and let the Daiya melt for a few minutes then put the scramble on a tortilla.</div>

Treating MyselfHey everyone! I hate to start off my fun Friday post on a bit of a down note but I can't really gloss over the news I woke up to. Pretty much as soon as I woke up I heard about the <a href="http://www.cnn.com/2012/07/20/us/colorado-theater-scene/index.html">horrific shooting</a> in an Aurora, Colorado movie theater in the midnight showing of The Dark Knight Rises. I was completely horrified to think that someone could do something so heinous and disgusting. My thoughts are with those impacted by this tragedy.<br />
<br />
Later on today I was running errands and ran into a TON of traffic. I finally passed the source of the problem which was a 4 car accident. They were all in one lane. I obviously didn't see what happened but my guess is that the first car either stalled or just stopped at a green light and the others just crashed right into each other, one right behind the other. It didn't look too serious, I think everyone was ok but one of the cars was completely smashed in the back and had quite a bit of damage in the front. I'd be surprised if that car hits the road again. Luckily the passenger areas of that car didn't look damaged.<br />
<br />
What's my point in all of this? At the risk of sounding morbid (and that isn't my intention, I promise), you don't know how long you have on this earth. For this reason, we need to make sure that we live every day to the fullest with no regrets. I know how easy it is to let life pass you by, letting your dreams get away from you and wishing you had spent your time differently. I'm totally guilty of it myself. However, there is no excuse for it anymore. It is so scary to take risks but we are all here for a reason and we should not be afraid to embrace that. So for me, I'm going to stop making excuses and start making changes in my life. I have spent too many years being unhappy and it is time to start making moves toward happiness and fulfillment. I owe it to myself and I'm worth it, and you are too! Life is way too short my friends.<br />

This purchase was inspired by <a href="http://busyveganmama.blogspot.com/">Sara </a>and her travels! A few years ago I was in Destin, Florida for my brother's wedding. We decided to fly in and out of New Orleans and drive to Destin so I was able to spend one glorious day and night in New Orleans. It went by waaaaay too quick and I fell in love with it immediately. We ended up at Cafe Du Monde because it's kind of a must when you are in New Orleans. I wasn't vegan yet and enjoyed a cup of their coffee (iced naturally) and it was AMAZING. I still think of that coffee. I had no idea that they sold decaf and then I saw that Sara had picked some up! I had actually been thinking about ordering some for months and knowing I could get decaf sealed the deal. I ordered it immediately!</div>

Now, as you all know I kicked my pretty intense coffee habit a few months ago. I am so proud of myself for not picking it back up. Right now I treat myself to one DECAF coffee (typically a decaf soy latte) once a week, typically on a Sunday morning. I recently read <b><a href="http://www.theyummylife.com/Iced_Coffee">this</a> </b>post which discussed a topic that Gabby had discussed prior on her blog as well. I basically learned that cold brewing coffee will result in a smoother, less bitter taste AND the coffee will be almost 70% less acidic!! That is great news! Wouldn't you know it, I commented on <a href="http://shenandoahvegan.blogspot.com/">Shen's</a> post just yesterday that I wished my Whole Foods had Tofu Scramble in the morning. Of course when I look today they had it for the very first time... well at least that I had seen! I decided that it wouldn't be right to just squander this opportunity even though I had vowed not to eat tofu today ;) I grabbed some scramble, a teeny bit of potatoes (on the left side of the container at the bottom... those teeny tiny pieces are tiny cut potatoes and onions) and I decided to add some fresh veggies and grabbed some tomato and cucumber salad. For lunch I made myself another tomato and spinach tofu scramble. The seasoning is so simple but so delicious. All I use is salt, pepper, garlic powder and nutritional yeast. It was so flavorful! Served with a brown rice tortilla and a peach.</div>

My appointment with my Dr. went well other than the fire alarm and subsequent evacuation of the building. She said my blood work results were excellent and I've been doing all the right things to take care of my shoulder. She told me that I need to be on top of my nutrition and that skipping meals (unintentionally... it happens because of my schedule) is not an option and that planning is key. So, I plan on planning :)</div>

So of course there was some menu planning involved. Ideally I'd have a book so I can just write everything down but until I can get one I just used a blank sheet of paper and wrote down my meals for the next three days. I included Monday since I won't have time to on Sunday and I don't want to get stuck on Monday! The goal is that I just don't have to think when I'm super busy, everything will be right in front of me. It will also help me get nutritious meals in me without having to reach for convenience.</div>

My dad is really awesome and got me a ton of cherries! Of course the timing isn't great and I won't be around to eat them that much so I pitted them, stuck them in snack sized baggies and put them in the freezer! Cherry chocolate smoothies here I come! Inspired by <a href="http://ingridimproves.blogspot.com/">Ingrid's</a> beautiful tofu scrambles, I made myself a spinach and tomato tofu scramble! I seasoned it with salt, pepper, garlic and some nutritional yeast. This was the PRFECT tofu scramble. Super fresh and so delicious. I served it with avocado and in true Ingrid style, a brown rice tortilla. Best meal I've had in a really long time! And a perfect, hearty meal to power me through my second long day!</div>

I'm pretty obsessed with these super cute DIY glasses! She just used the back of a paint brush to dot acrylic paint on the glasses. I'm sorry my posts have been kind of boring and uninspired lately. I haven't been feeling to great. I'm super tired all the time and my whole body hurts pretty much all the time too. When I wake up my entire body is stiff and hurts a lot. Luckily I have an appointment with my primary care physician on Tuesday so hopefully she can shed some light on what may be going on. Until then I'm going to try and get as much sleep as possible and eat the best food possible to fuel me through the next three days of weddings!<br />

I'm going to apologize in advance but I have a feeling this post will be short. I took my first Bikram Yoga class in a year and a half this morning. I expected it to be brutal because that first class always is... but this morning was the worst I've ever felt it. The room was 107.6 degrees when I walked in. I had to sit out a few sets because of severe dizziness and nausea. I walked out with a pounding headache, bad nausea, more dizziness and feeling 100% drained of energy. I felt like shit basically. Oh and to top it off, my shoulders were super fatigued and my left arm hurt.<br />
<br />
I came home and obviously jumped in the shower immediately. I feel like I sweated out 90% of the water in my body so the shower felt good. Then I got into bed and literally could not lift my head off the pillow for an hour. It was horrible. I know from past experience it does get better but at this point I don't have time to feel this shitty. The next time I can get to a class is Friday before my first of 3 weddings this weekend. There is no way I can risk feeling like this on Friday! They just started Vinyasa yoga classes there so I'm thinking about trying that instead.<br />

The goal for today was hydration hydration hydration! I drank a ton of water and whatever food I could get down was hydrating, clean, and high alkaline. Yes, I'm aware it isn't much but it's more than I thought I'd get down!<br />

Those of you that may have taken a Bikram Yoga class know that one of the top rules is DON'T EAT BEFORE CLASS! I'm glad I didn't, I can't imagine how much worse it would have been! I made this smoothie before the class and kept it in the fridge so it would be ready as soon as I got home since it was a bit late for breakfast (I drank it at 11:15am). I focused on getting hydrated and recovering so this one has banana, coconut water (both great for replacing electrolytes), pineapple (anti inflammatory), vanilla vega powder and spinach (alkaline!).</div>

I now have this crazy obsession with mason jars. I want to put everything in a mason jar! I just chose this photo because they are so small and adorable and fresh squeezed lemonade sounds amazing right now. I love the lids too! Can you believe the weekend is already over? It totally flew by and that's kind of a bummer but I'm just going to enjoy the rest of my evening and take it from there. The fights were awesome last night, I'm really happy my brother decided to order it! It was definitely a good time and it was good that I got out of the house. I got up this morning and got my pedicure which was nice and relaxing. This afternoon we went to my brother's house again for BBQ leftovers and fun time with Delilah. My sister in law and I took her to the park and she is so funny! She runs around like a crazy lady. She has so much energy!<br />

I'm in for the night now, just trying to cool off. I had some pretty great eats today too :)<br />

I'm back! This past week has been pretty tough for me and I hit a bit of a wall on Thursday. I was just really exhausted during that wedding and it took me all day yesterday to recover. I worked in the studio in the morning and then came home and could barely get out of bed. The combination of long hours, not eating enough good food (fuel) and the horrible heat really took it's toll. I went to bed early last night and woke up feeling pretty refreshed so I started off my day with some no impact cardio. I hadn't worked out all week because of my horrible schedule and it felt good to finally get back to it. Bikram yoga on Monday :)<br />

I'm happy to say my dinner party was a success! It was so nice to see my friend and her fiance and it was really fun to cook for everyone! My plate. The lasagna fell apart in the oven. It was fine though it still tasted good and everyone seemed to like it. I was impressed by the ricotta, it tasted pretty good! The veggies were really good, still a bit crisp which was nice. I'd say it was pretty successful! The salad was nice and fresh and was a good way to balance out the richness of the lasagna :)</div>

For dessert I made a (Mostly) Raw Cherry Berry Crisp! I just took raw cherries and strawberries and topped it with a mostly raw crisp I made. I used oat flour making it mostly raw since I'm sure they steam the oats before grinding them but I wanted to keep the oat flavor you find in most crumbles. Otherwise, it is completely raw! It went over well!</div>

We had a great time until Tyler, my brother's dog, has a bit of a meltdown. He's incredibly skittish and heard a firework and started trembling and panting and wouldn't stop. I figured out he wanted to go upstairs and lay in the bed snuggled up with me and wouldn't you know it, as soon as we called it a night and came upstairs he stopped panting and trembling. It makes me feel horrible that he'll be home all day while I'm at work :(<br />

Can you believe this is AFTER I cut off 5 inches of hair! It is still so long that it gets cut off in the photo! I love the color, it is so rich and has a touch of warm red underneath and she got rid of 5 inches of dead ends and cleaned up some layers. I'm very happy with how it came out :) Can't wait to see what the beachy sea salt spray looks like with this cut!</div>

Happy Thursday! So excited that I am going to have my first day off in two weeks soon :) I'm extra excited that I get to spend time with my friends and cook a nice meal on that day. I have a wedding on Sunday but at least I'll have a chance to relax and do something fun on Saturday. I'm also finally getting my hair cut and colored tomorrow. It has literally been at least a year since I've cut my hair. I need a trim pretty desperately.<br />

Before I get into the post, I got home from work last night and found out that my college (Undergraduate) was going to be featured on the SyFy show School Spirits! I went to SUNY Geneseo in upstate NY. I went way after the guy featured in the show and I actually had never even heard of that haunting even though I guess it is famous. We had a bunch of supposed hauntings in the school, and I would venture to say that the building that houses our radio station is haunted. I was really involved with the radio station and I hated being there alone at night. I experienced a few things that creep me out just thinking about it! I'm sorry I haven't been around much. I feel like I work all the time and when I'm not working I'm at the gym or at a Dr. or something. I'm pretty exhausted and while I have Saturday off, next week is going to be really intense. Monday and Friday are short days but on Tuesday I am working 9-5 in the studio then I have a freelance party to shoot until 11 pm. Wednesday and Thursday I have weddings. It's going to be a long week but I think I have the weekend off next week? Fingers crossed!<br />

Anyway, I decided to go to the grocery store this morning instead of after the gym so I could avoid traffic and keep the trip down to an hour instead of 2. I got a pretty sweet haul, most of which being for my dinner on Saturday :) I bet you can figure out what I'm making!<br />

I got clearance from my physical therapist for Bikram yoga (he's actually a big fan of yoga and thinks it'll be great for me) so I have taken off the next month from training at the gym and I'm switching to no impact cardio and Bikram yoga. I will probably start yoga on Monday :) I'm a big fan of Bikram yoga but I'm not a big fan of that first class after taking a really long break. It's pretty much torture but I'll survive!</div>

I'm sorry in advance for the lameness of this post. I have only photographed a few things I've eaten over the past day or two because of just how damn busy I've been. Yesterday turned out to be a nightmare partially because I only slept for about 3.5 hours (I was woken up by incredibly loud thunder and incredibly bright lightning and once I'm up, I'm up. No getting back to sleep for me!) and partially because the wedding was difficult. I left my house at 6 am and got home at 7 pm thanks to some ridiculous traffic. On the bright side, I passed out at 10 pm (which is SUPER early for me) and woke up at 8 am (which is late for me, ha!)! I feel refreshed today but we are anticipating another really difficult wedding. Hopefully I'll get through better than yesterday. I'm sure the all the vitamin D will help though!<br />

I'm bringing this Two Mom's in the Raw Blueberry Nut Bar to work today. The reception is in a Temple which is phenomenal for me because it takes the guess work out of whether or not there is dairy in anything! Look how cute this skirt is! It is actually a lot nicer in person too! I went to Old Navy this morning to pick up some more dark gray and black V-Neck t-shirts (I wear black dress pants and a black or dark gray shirt to work) and saw this super cute skirt. It was inexpensive and I figured I deserved it so I got it :) I plan on wearing it with a turquoise tank top (some of the stitching at the bottom is turquoise) and a white V-Neck over it with some cute wedges. You all knew kickboxing would show up sooner rather than later. This is Gina Carano training with an amazing view. That normally doesn't happen though. I recommend it because it is a great stress relief, teaches you a lot of skills you can use in self defense (which you would hopefully never need!) and it really just feels good to kick ass! I'm going to miss it during this break but hopefully when I get back to it I'll be back to normal!</div>

I have practiced Bikram yoga for two periods of about 4 months each. The first session is absolutely miserable but after that it feels amazing. It is cleansing, your flexibility improves exponentially, you learn how to deal with the heat and it is such a feeling of accomplishment every class. This is what I have been thinking about doing for the next month while I have to eliminate impact training. I think it will help my neck a lot. If I remember correctly, it helped the last time I picked up the practice... about a year and a half ago. I'm going to run it by the physical therapist before I start.</div>

I have mentioned it a million times on here but don't know if I explained it well. This is the arc trainer. I love this cardio machine and it is one of the only things that doesn't aggravate my shoulder/arm. I usually describe it as a cross between a stair climber and an elliptical. Love it.</div>

So I mentioned the other day that I had an appointment with a physical therapist yesterday. After an hour and a half of evaluations, we have pinpointed that there is no shoulder injury at all and my pain, numbness and tingling are in fact caused by a bulging disc in my neck (C6 if you follow that kind of thing ;]). I'm really happy to have figured this out finally because over the last 6 months it has really gotten bad. I probably downplay it a bit but the truth is that my shoulder hurts most of the time, and when I do something to aggravate it I get numbness and pain down my left arm and into my thumb and pinky fingers. One major reason why I hate running is that 9 times out of 10 I will get off of the treadmill with horrible pain, numbness and tingling. The impact must aggravate it because it is terrible. I'm probably really lucky that the disc isn't herniated given the amount of impact that I put my body through between the running, jumping and fight training that I do.<br />
<br />
I'm clearly a stubborn girl because none of this has stopped me in the past. I was advised to put the activities that involve impact on hold for a few weeks and I definitely need to listen. I'm tired of being in pain and struggling through it. I've been training probably at 60-75% for the past 6-12 months and it is really sad because I remember all of the things I used to do and want to be able to do them again. So I'm going to have to take it easy for the next month at least. I'm working on figuring out a new workout plan that will help me get back to 100%. I'll definitely keep you posted on that. I have an idea but I'm going to run it by the physical therapist first. For now I'm replacing running with the elliptical (did 30 minutes of intervals this morning) and doing all strength training with my trainer (45 minutes this evening... omitting overheard presses for a few weeks).<br />

Anyway, I know this seems negative but I'm really happy that after 3 years of searching for answers I finally have one. I'm disappointed that I have to stop my Tough Mudder training for a little while but I know that it is the smartest decision to avoid more serious injury. I'll have to play it by ear in terms of Tough Mudder. It's pretty clear to me now that I'm going to avoid all obstacles that may aggravate or worsen the problem. Side note - I told my physical therapist that I was training for it and he said he was doing it to! How funny!<br />

Anyway, sorry for the long update but you've all been so supportive throughout the whole thing so I figured I'd keep you in the loop. I may be on the sidelines for a bit but I can definitely still kick ass ;)<br />

Check out this yummy, decadent treat! They are rich and chocolatey, but still not too terrible for you! Definitely a great way to cure a chocolate craving :) These are mostly raw because I used cocoa powder but you can always use raw cacao powder if you want to make them completely raw.</div>

I tried to make them in the dehydrator because I thought they would crystalize kind of like the raw buckwheat cereal. It didn't really crystalize or even harden like I thought they would.</div>

Basically what I did was make the syrup (recipe to follow) and used it to coat 1 1/4 cup of soaked almonds. Then I dehydrated the almonds at 104 degrees for 16 hours. They were still a little sticky after 16 hours so I turned the dehydrator off and waited to see what happened. They hardened up a bit and then I popped them in the fridge to store. </div>

These things are amazing! Like I said, they have a rich chocolate flavor with a kick of cinnamon. You can't taste the cayenne at all but you can feel the heat just a little in the back of your throat. It is so good! </div>

I decided to work out at home this morning because I woke up late. These ladies are amazing, these workouts are really tough. The arm workout is especially tough for me because of my jacked up shoulder. Hopefully I'll get to the bottom of it in physical therapy tomorrow!<br />

I hope you all had a really lovely Father's Day! We had a great day yesterday :) We went to my brother's house and had a family BBQ (well they BBQ'd and I had a big ol' salad) and had a really fun time. Delilah is a little chatter box. She LOVES dogs and freaks out and screams "puppy!" every time she sees one! She loves animals in general :) The two of us spent some quality time together too which was so nice. Definitely a great day!<br />

Today I started a new workout routine as well! I woke up at 6:30 am and got ready for my first 2 a day workout! My morning workout was 2 miles of intervals on the treadmill. Then I went back to the gym in the evening for my second workout: Intervals on the arc trainer and a 45 minute training session. I'll be doing 2 a days on Mondays, Thursdays and Fridays and one workout on Tuesdays, Saturdays and Sundays. My running will be done on Monday, Tuesday, Thursday and Friday and I will be doing non-impact cardio on Saturdays and Sundays. I don't like doing impact workouts on days that I have weddings. It sounds like a solid plan and I'll be paying attention to my how my body reacts over the next week or two and adjust accordingly. Nutrition is going to play a major factor in this!<br />

Before I get to today's food I have a mini grocery haul to share with you! A new <a href="http://www.fairwaymarket.com/">Fairway</a> opened up close to my house and I've been told I HAVE to go there because it is amazing so I headed over there. I was so overwhelmed! They had so much stuff, a huge gluten free section, tons of organic food and lots of health and wellness items. It was crazy! I was going to do my grocery shopping there this week but the produce was even more expensive than Whole Foods! I picked up a few things but I'll get my produce at Whole Foods later this week. I haven't eaten dinner yet. I'm still cooling off after my workout. Even after I shower I'm still warm. It takes me a while to get my body temperature down sometimes. Does that happen to anyone else? I have a feeling I'll be making a big salad for dinner then maybe I'll have a rice cake with some walnut butter.</div>

Now that I'm doing workouts twice a day a few days during the week I really need to be on point with my nutrition so I'll have the energy to keep up my exercise routine while working the 6-7 days a week that I'm working now! I have two weddings this weekend so I'll be working twelve hour days Saturday and Sunday. If anyone has any tips on how to fuel my body correctly after that much activity I'd greatly appreciate it!</div>

I used my recipe for <a href="http://thisiswhatieatvegan.blogspot.com/2011/10/vegan-mofo-day-21-carrot-spice-oat.html">Gluten Free Carrot Spice Oat Bread</a> with a minor tweak. I basically just left out the white sugar. I thought it would be sweet enough with just the maple syrup, bananas, carrots and raisins. I was right! No white sugar necessary so these cuties are naturally sweetened. And the best part? I plugged the recipe in to the Lose It! app and each muffin is less than 200 calories! Gotta love that! Oh and I cut the baking time to 22 minutes :)</div>

Here is the inside! It wasn't too sweet but just sweet enough. The only thing was that they stuck to the paper a little bit. These are SO DELICIOUS! They are really savory and has really great flavor. The chips are super light and they came out great in the dehydrator. The only thing is that I'll probably puree the onion next time because I feel like it is weird to have chunks of onion on my kale chips. Or at least try to dice them even smaller. Anyway, dehydrator success yet again! I'm on a roll with it now ;)</div>
