Breakfast: Unpictured, sorry! I woke up really late (especially for me) so I just slathered some peanut butter on a banana and ate it on my way out to run some errands.
"Snack": Iced coffee in a mason jar while I was getting my lunch together.
Lunch: A huge pile of leftover stir-fry with shiitake mushrooms, tofu and bok choy. Served over brown rice.
Afternoon Snack: I was craving hummus like crazy so I took a few Mary's Gone Crackers in the onion flavor (crispy gluten free crackers, yum!), slathered them in hummus and topped with sun-dried tomato. So good.
Dinner: I had to take advantage of the gorgeous veggies in the Whole Foods salad bar so I made a salad. I took the pic pre-chop this time so you could see the full glory of this salad. It was a bed of mesclun greens with julienned green and yellow squash, cucumbers, carrots, chickpeas, broccoli, sun-dried tomato and one lonely dolma. It was amazing!
Dessert: Unpictured bowl of juicy watermelon. Clearly I love watermelon.

Oh, I've tried the herb variety of the Mary's Gone Crackers and didn't like them at all. Another flavor might be better. The snack looks great otherwise, though. Definitely something I'd love to eat.

ReplyDeleteFF-I don't know why I like the crackers...there is nothing special about them and they are very...seedy. Lol I like bland cardboardy crackers though, one of my weird taste preferences. When you add hummus and sun-dried tomatoes, anything will taste good!
ReplyDeleteAiko-Thanks! I like to eat more raw foods in the summer because it is too hot to cook and heavy foods make me feel yucky. Whole Foods is great but try a farmer's market if you have one local to you. I love WHole Foods for one stop shopping but the farmer's markets are really great for buying fresh, local produce. I just got home from mine actually!
Great snacky treats here. Other than fruit and salad, I haven't had much of a raw food experience - something I am hoping to address soon.

ReplyDeleteThis is one of my favorite combos! If I had fresh basil I'd have put in on there too. When I ate wheat I used to eat either a toasted ezekiel english muffin or toasted bagel with hummus, fresh basil and sun-dried tomato. It was one of my favorite meals!
