Vegan MoFo Day 30: Baked Oatmeal and Chipotle!


Good afternoon dears. In total contrast to yesterday's apocalyptic looking weather, today was bright and sunny and absolutely gorgeous. I went out a did a little shopping with my mom. We ran to Michael's because we are craft nerds ;) and to the book store. I drooled over Vegan Table but decided to show some restraint and hold off for now. 

After we got home I decided to go to the urgent care center that is about 10 minutes from my house. They have on site xrays and I figured that I can at least do a set of xrays to rule out the possibility of injury before I get the Dr. situation in order. Let me tell you he was SO nice and SO patient. He had them do xrays on my neck and shoulder. My bones are perfect, no structure issues at all. He believes (along with everyone else) that the problem is a pinched nerve in my neck. He said my neck is in spasm which is what is causing the flare up and discomfort in my shoulder. There isn't much you can do for a pinched nerve I just need to rest when it flares up so it'll heal quicker. So I'm taking the week off from all exercise (he said even yoga can hold up healing) and I should be ok. As long as I'm not taking hits my fight training should be ok (!!!!!) and I need to avoid running and jumping because those activities will put pressure on the neck I guess. It was so nice that he actually listened and helped and I feel so much better about everything. So now I can search for a doctor without settling or rushing.

So now it is time for some amazing eats!!


For breakfast today I decided to make myself baked oatmeal. I didn't go as decadent this time and decided to use raisins instead of chocolate. I made a few tweaks to the recipe as well. This is what I did.

Raisin and Walnut Baked Oatmeal

Ingredients:

1/3 cup oats
1/2 tsp cinnamon
1 packet Stevia
1 tbsp raisins
1 tbsp choppd walnuts

1/2 banana (mashed)
1/4 cup plant milk (I used Unsweetened Vanilla Almond Breeze)
splash vanilla extract

Directions:
1. Preheat oven to 380 degrees. Spray ramekin or baking dish with cooking spray.
2. Combine all dry ingredients in one bowl.
3. Separately combine wet ingredients.
4. Add wet ingredients to dry ingredients and thoroughly combine.
5. Put mixture into ramekin and bake for 22-25 mins.
6. After 20 minutes put oven on BROIL and cook for another 3-4 minutes until you get a crispy crust on top.
7. Enjoy!

For lunch I had a super yummy burrito bowl from Chipotle.

No clue what is for dinner but I doubt it'll be exciting. Make sure you check back for the final round of the Holiday Baking Bracket sometime next week!

  2. Great to hear you were able to make some progress with your shoulder in terms of diagnosis. Now, at least you can put your mind at ease a little.
    I've gone to the ER a few times in similar situations; it's usually a great way to get a lot of the tests done at once, where getting them done through a Dr. office would take several visits.

    The oat cake does look yummy. I think I'd like that better than regular old oatmeal in cereal form.

  3. Woo hoo! So glad to hear you got in to see someone. The urgent care facilities are great! I've been happy with my experiences when I've gone in. Now you have an excuse to treat yourself to a massage!

    The baked oatmeal looks like a perfect way to start a chilly morning.

  5. Thanks Sarah! Yeah I would have preferred to wait for the snow too ;)

    Rose - Thanks! I never even thought about the ER, probably because I didn't see it as an emergency worthy of the time and effort. I find the ER a giant pain in the butt. I'm glad I went to Urgent Care instead of waiting though! Give the baked oatmeal a shot, you can personalize it to your tastes!

    Ingrid - Thanks! I've been going to urgent care with all of my minor illnesses and injuries over the past year and a half. My old dr's office was so terrible...even though I liked her they are just a horrible office that no one likes...which is probably why my dr. left! The baked oatmeal was so yummy! Cookie bracket results soon, yay!

  6. Glad to hear more positive notes about the shoulder problems. Hope you heal up quickly.
    The baked oatmeal is such a great idea. I love oatmeal (obviously) but I have never made it like this!
    And...did you get anything at Michael's?? I'm a huge craft nerd too but a little overzealous sometimes and buy all this stuff and don't do anything with it!

  7. FF - Thank you. I hope so too! A week is way better than how long I could have been out. You should definitely try the baked oatmeal, it is SO GOOD! I didn't get anything from Michael's :( I'm always really overwhelmed by that store. My craft dreams are far greater than my reality :) I really wanted to try jewelry making but I just didn't even know where to start!

  8. I went to Michaels yesterday too. I needed more scrapbook adhesive. The Michaels store by me is always packed with craft nerds. I want to buy EVERYTHING!

    I'm glad you were able to get xrays and there's no injury. But that stinks that you'll have to take a week off from exercising. :(

  10. I'm glad you found out what's going on with your shoulder. At least now you know how to take care of it. I've never had a pinched nerve, but I've heard they are painful!

    Your baked otameal sounds amazing...I'm going to have to try that. :o)

  12. Sage - I LOVE Michael's! Yeah no injury but the whole pinched nerve thing is kinda stinky because there really is no way to heal it, I just have to try and prevent flare ups and whatnot. Definitely try the baked oatmeal! If you love pumpkin like I do try swapping the banana for pumpkin puree!

    Jenny - Thanks! The oatmeal was so warm and yummy. I'm feeling better about having an almost answer (I'll probably have to get an MRI done) but there is nothing I can do about it so I'll just have to learn what to do to be as comfortable as possible.

    Michelle - Thanks! It isn't painful it is just SO uncomfortable because I feel like I constantly need to adjust my shoulder...almost like it is out of place. I get back spasms though that are probably related and THOSE are the most horribly painful things I've ever experienced...definitely try the oatmeal! I love oatmeal lol
