Happy New Year!

Hey everyone! Happy new year!! I hope you all had a super fun, safe evening :) Mine ended up being quiet because I wasn't feeling well. I was planning on drinking some of that delicious Red Electra wine, but I had to swap it out for tea. Wah! Oh well, I woke up feeling much better so that is all that matters!

I was out for most of the day so I only have 2 meals to show you. I FINALLY replaced my power cord for my computer so I am very happy to say that I can now move my computer around again which is nice.

Check out the eats.


For breakfast I had some spicy, fat free refried beans in a brown rice tortilla with a half of an avocado.


For dinner I stir fried up some leftover tofu, broccoli and brown rice into a quick, tasty meal. So good. And yes I used my new chopsticks! They are awesome! Great way to slow down a meal :)

Not looking forward to going to work tomorrow but I'm definitely looking forward to the double training session I scheduled! An hour and a half of fun, yay!

  2. Yummy! Do you make your own brown rice tortillas or are they store bought? I'd love to try some bought gluten-free breads (since I never have much luck with my own).

  5. I like chopsticks for that reason, as well. Your resolutions sound very doable, and you seem like the kind of person who can accomplish whatever you try to do. I'm still formulating my resolutions in my head. Happy New Year!

    Nikki - Thanks :) I like eating with chopsticks too...it really helps slow meals down which is great!

    Isobelle - I buy my brown rice tortillas from trader joe's. I also really like Food For Life's Millet Bread for toast. it has great flavor and a decent texture when toasted.

    Shen - Lol! If you find a good trainer and an activity you love it isn't grueling or horrible at all ;)

    Ingrid - Awesome, glad you enjoyed a glass for me! I definitely recommend trying this breakfast, it is super easy, great protein boost and filling. Getting stoked for my workout!

    Sage - Those are the chopsticks for dummies! I am a total chopsticks spazz so the ones I got as part of my holiday gift makes life easier. I'm boring too, just a mellow evening...

  10. Great job on the workout - wow!

    The food looks delicious. I love avocados and had an avocado sandwich for lunch today. I didn't take a picture though; maybe I will tomorrow ;-) Good for you on using the chopsticks. I don't have too many food "problems" anymore, but one I still have is eating too fast, and maybe I should try chopsticks to slow myself down.

  11. Oh man, that stir fry looks DELICIOUS. How do you get the tofu so crisp looking? It takes me forever it get it browned.

  12. Miss Rachel - Thanks! Definitely try the chopsticks, I've noticed it helps a lot. I get full a lot faster too which is a great side effect :)

    Ashlae - Thanks! I basically just press and drain the tofu to get it as dry as possible and I let it sit in the pan until it gets nice and brown. I don't touch it at all until I'm ready to flip it so try letting it sit instead of constantly stirring. Hope that helps!
