Check out what I'm eating today!
Breakfast was oatmeal - 1/4 cup oats cooked in 1 1/4 cups water, one packet of stevia, cinnamon, 1 small banana and a tbsp of chopped walnuts.
Midmorning snack will be an orange.
Lunch or third meal will be homemade brown rice tortilla chips (sooooo good! way better than regular tortilla chips), a giant carrot sliced up, and 1/2 avocado mashed with sea salt and black pepper.
Chocolate Brownie Pure Bar for afternoon snack.
Dinner will be spaghetti squash, spinach, zucchini, sauce and nooch.
I am really running on empty in terms of groceries. Tomorrow is going to be slim pickings, hopefully I can get to the store tomorrow night.
Hope you all have a great day and that mine goes really quick ;) Catch up with you later!
I love your eats. Your spaghetti squash looks amazingly good!
ReplyDeleteAww thank you so much! The spaghetti squash is really delicious!
DeleteI hope you make it! Tue is typically my longest day. I work about 14 hours. Yuck. Looks like you have some great food to help you get though! :)

14 hours, that's gross!! When I work weddings, days can be up to 14 hours including travel. It's pretty brutal. It went slow but I made it, thanks! The food definitely helped energize me :)
DeleteI tried one of those apple cinnamon Pure bars yesterday, and it was pretty good. Glad you're continuing to enjoy the spaghetti squash; it's such an unusual vegetable. I hope you're having a good Wednesday.
ReplyDeleteThanks! I ran out of Apple Cinnamon, I need more actually :) The spaghetti squash is great and I have a ton left lol.
Delete10 hours is a long time to be at work! I hope that it flies by for you.
ReplyDeleteGreat looking food, as usual. I really do love the looks of the squash dish!
Thanks Molly! It actually went slow but oh well, it's done now!
DeleteNo workout yesterday for me either! The only good part about making it through Wednesday, is that we are closer than ever to the weekend!
ReplyDeleteI almost had oatmeal this morning, but ran out of time - might have to make that happen soon. I haven't had a brownie or brownie bar in forever, was it good? How did you make your tortilla chips? Looks yummy!
OMG I know, too bad I have to work the next few Saturdays. Wah! Oh well it's just a few hours!
DeleteOatmeal is so good, I used to eat it a lot but I've been neglecting it in order to enjoy my smoothies! This was a great bowl though :) The brownie pure bar isn't my favorite. If I want chocolate I'd rather eat a small piece of good dark chocolate and eat the apple cinnamon pure bar instead.
Ingrid, you MUST make these chips! You'll never eat the crap out of a bag again. One tortilla so it is portion controlled too! You just cut the tortilla into the shape and size you like, spray with a tiny bit of cooking spray, sprinkle lightly with sea salt and bake at 400 for 8ish minutes. I watched mine the whole time though bc they can go from golden to burned really fast!
Will definitely try making a tortilla into chips this weekend!! Thanks for letting me know the secret! :)
DeleteNice textured background for your eats. Especially the color contrast with the Orange.
ReplyDeleteBelieve it or not it is just a crappy dosposable tablecloth! I like the way the color pops though :) Thanks!
