Today, however, we've got some good stuff going on! I promised some pumpkin and I'm gonna deliver some pumpkin!! Working 11-9 today so I photographed my packed up meals and to avoid 2 days in a row of no posts, I'm gonna post now :)
Breakfast: Who needs Starbucks' Pumpkin Spice Latte when you can make your own Pumpkin Pie Smoothie!! This is a great recipe, I definitely recommend it for you pumpkin lovers out there! Great breakfast :)
Lunch: Under the veggie nomness is 1/3 cup brown rice and then I have yellow and green grilled squash, grilled eggplant and roasted chickpeas. This should definitely be hearty!
Dinner will be this sad looking chopped salad. I only had romaine and it is amazing how much less vibrant it looks. This one has romaine, carrots, cucumber, sun-dried tomatoes and broccoli.

My blog has a post today about how bummed I am that the PSL isn't vegan. I'll have to try this pumpkin smoothie! I enjoy your blog a lot and the photos of what you're eating. It's obvious you really appreciate good, wholesome vegan food.

ReplyDeleteSage - Thanks so much! I know it is a huge bummer about the pumpkin spice latte, but when you think about it, making your own pumpkin treats is so much more satisfying (and healthy!!).
Michelle - The smoothie was really delicious. I'm not really a drink your breakfast kind of girl but this was good! And I think that it may be a great idea to freeze it in my popsicle mold for pumpkin pie ice cream pops!
Ingrid - Definitely try out the smoothie! Thanks, it was indeed a long day...that says it all ;) Saturday will be worse though...I have to be out of my house by 6am (which means wake up is about 4:45) and I prob won't be home til 7 pm.
Shen - WHy thank you :) I guess I'm just not used to romaine anymore. LOL 11-9 simply means I'm working from 11am-9pm today, my long day.
FF - I hadn't even thought about adding caffeine! I'm up for the challenge. Lunch was really good, I'm a sucker for roasted/grilled veggies.
Sarah, I love your blog! Posting your daily eats is so great, and everything looks fantastic. I'm a huge pumpkin fan and have seen pumpkin smoothie recipes floating around the internets lately. I must get a pumpkin and try one soon. I'm going to be making a lot of pumpkin recipes in October and I'm already so excited. Glad I found your blog! Makin' me hungry :)
