Happy Friday!!

Hey everyone! Sorry I didn't get to post yesterday, just turned into a busy day. Earlier this week my Thursday double session was split into two single sessions - one Thursday and one Saturday morning. I still have my double scheduled for Monday, and I can't wait!

Today was a short 5 hour work day (yay!) followed by some cooking and then a quick trip to the gym for a quick 30 minutes of cardio on the arc trainer. Lots of yummy food today!

Cherry Chocolate green smoothie for breakfast. So delicious.

For lunch I finally got to eat my roasted potatoes. I feel like I'm being teased by Shen & Ingrid's beautiful roasted potatoes so I bought some fingerlings and roasted them up with some sea salt and served them with a big chopped salad. They were so delicious! I'm glad I finally made them.

After the gym I ate a banana with some almond butter. No pic, sorry.


For dinner I finally have something new to show you! I made 2 recipes out of Crazy Sexy Diet. At the top of the plate is the Teriyaki Tofu. I actually made one adjustment to it and it came out so good! I couldn't find pineapple juice so I decided to use the juice of one orange plus about 1.5 tbsp of the zest. It added such a bright, lovely flavor, I love this recipe! The cabbage salad is the Cabbage "Hemp" Salad from the book. The hemp is in quotes because it is really more of a cabbage sesame salad. I had the choice of spending $11 on hemp seeds or $0.12 on sesame seeds so I went for the sesame. I also used sesame oil instead of hemp oil. It is really delicious and a bit tangy thanks to some lemon juice. I also cut up a carrot with it.

I'm having kind of a hungry day and I have calories left so I'm going to make myself some air popped popcorn with sea salt a little later. Yum, perfect night time snack! You know what it looks like though :)

  1. Hooray for potatoes! Think I'll have some for dinner, too! The other day when you mentioned the Hemp Cabbage Salad, I looked it up - and now you've convinced me to make it. As soon as I can dig out my car. Which might be tomorrow. :)

    The tofu looks fantastic as well, as does the shake - and I can now speak from experience that I know it's really good!!

    1. Yay for potatoes! They were so good, I see more in my future :) The tofu was great, I'm glad I made the changes. So glad you enjoyed the smoothie!

      Good luck digging out, I remember how annoying it was when we got slammed with crazy blizzards like every other day last winter! Have a great weekend!

    1. My smoothie cup is actually plastic. I got it at Kohl's when they had a crazy sale. I think I got it for $3!

  5. I didn't recognize that those were potatoes at first. I thought, "What? Are those large peanuts in the shell?" Ha Ha. Roasted potatoes are delish and definitely a great winter food - very comforting and warming.
