Portabello Tostadas!

Gluten free and so hearty and delicious! Roasted portabello topped with spicy fat free refried beans and 1/2 of a mashed avocado.  Served with fresh fruit.

  2. It was really simple! I just roasted a portabello with some pepper and garlic until it was cooked. Then I topped it with spicy fat free refried beans and popped it back in the oven to warm through. When it came out I topped it with mashed avocado. Super simple and it was really good! I had it again for dinner tonight ;)
