Monday Already?

Hey everyone! Sorry I didn't post this weekend. I decided to take the weekend off... from everything. It was very relaxing, I got to spend time with Delilah and it went WAY too fast! I am back now though and I have some fun meals to share with you.

Like I said, I took the weekend off from blogging, mostly because I didn't want to worry about photographing everything and so I could just relax. There was one meal that I did photograph though because I thought it was kind of awesome and I couldn't NOT show you!


I took some of my Vegg Frittata breakfast burrito! I took a wedge of the frittata and mashed it up and put it in a gf tortilla along with some avocado. You can't see the avocado really in the above photo, which is why I took the next one...


The other end of the burrito is way prettier and you can see the avocado :) It was really good! The avocado was the perfect addition!

Now onto today's eats.


Breakfast was a blueberry mango smoothie: 1/2 cup each of frozen blueberries and mango, almond milk, Vega Shake & Go Vanilla Almondilla and a ton of spinach.


Snack was a big ass orange.


Lunch was the last piece of Vegg Frittata and a big side of salad.

Pre workout snack was a Lemon Coconut Hemp Seed Bite.

I'm off to the gym in a few minutes for a nice long workout including a training session. Hopefully my shoulder will be ok. I woke up and did some yoga this morning because I thought that part of the problem may be the way I sleep... it helped a little I suppose? I got approval for the MRI so I'm about to make the appointment and hopefully we can get this show on the road sooner rather than later!

Not sure what dinner will be, probably nothing special. Just working on going through the pantry stuff which is mostly grains so it'll probably be quinoa and veggies!

Happy Friday!!

Hey everyone! Happy Friday! I hope that you all had a good week and I'm sure all of you are excited about the weekend like I am :) Sorry I didn't post yesterday, I was running around in the morning getting ready for my appointment with the spine Dr. and just didn't get to take photos. After work I had the gym so it was just a busy day all around!

Obviously I don't have answers just yet about what is happening with my shoulder, back and neck but it seems like this Dr. is actually interested in trying to figure it out, which is incredibly refreshing. A snippet of  what he told me: "Whatever it is, it's strange. It was strange in the beginning and it is still strange. But we will figure out what it is (I had actually seen him once two years ago for the same problem but went to a neurologist after...who did nothing)." This was so refreshing to hear since I've been trying to get answers for three years and it seems like I finally have someone on board with me. Oh and the icing on the vegan cake was that they took me in to the room 5 minutes early and the appointment started exactly on time. I don't know about you but I'm usually waiting at least a half hour past my appointment time at a Dr's office. So that was awesome. I felt really good when I walked out of there. I am going to have an MRI done on my neck and we'll take it from there. Just waiting for authorization :)

So today was business as usual. Started off at work then I ran some errands then I went to the gym and did 45 minutes of cardio. I also ate some pretty awesome food. Check it out!


Breakfast was a "green" smoothie. Not green but had lots of greens. It had frozen banana, frozen blueberries, almond milk, Vegan Shake & Go Vanilla Almondilla and lots of spinach. Very delicious.


Late morning snack was an AMAZING mango! I've never had fresh mango before (just frozen) and OMG it is so delicious. I'm glad I decided to pick one up to try.


I thought I would take a picture of the carnage because it looked hilarious. These were the results of the Friday Mango Massacre. I know there are more civilized ways to eat it but I don't care. It was fun being all messy :) Thank goodness no one was around!


For lunch I ate this amazing snacky plate. It had carrots, celery, tomato, home made gluten free tortilla chips and lots of hummus. Delicious!

Post workout I had a protein shake. Then after my shower I ate seaweed snacks to hold me over until dinner.


Dinner was a big, beautiful chopped salad. Yum!

Forgetting Sarah Marshall just came on FX and will lead right into The Ultimate Fighter Live which is pretty much my perfect night :) I'm cuddling up into bed and I see some air popped popcorn in my future.

WTF Wednesday

Hey everyone! Today is my long day which is usually made a lot longer due to the amount of meal prep I have to do in the morning. I eat breakfast at home but the other snacks and meals are eaten at work so it just takes a bit longer to get ready but it's worth it to eat a healthy, home cooked (or prepped) meal. The effort was well worth it today because my meals are going to be so good!


My breakfast was so good! I had breakfast quinoa! I basically made it the exact same way as oatmeal. I took some cooked quinoa, added it to a pot with some almond milk, a little stevia and some cinnamon. I cooked it down until the milk was mostly absorbed then I added some raisins. After the rest of the liquid absorbed I added some sliced almonds and a half of a banana. It was so delicious!


For late morning snack I'm going to have the other half of the banana and a half of an orange.


Check out this beautiful stir fry for lunch! Tofu, broccoli, spinach, zucchini, onion and carrot. This is going to be so good!


For my afternoon snack I'm going to have some roasted seaweed from Trader Joe's. Mmm.

My dinner is actually already at work but it is just some raw celery, carrots and tomato with some hummus. Simple but delicious.

I'd say today is going to be an awesome food day. I think that will help me get through the 10 hour work day. I have an appointment with the spine dr. tomorrow so hopefully he'll put me on track to finding some relief for my neck, back, shoulder issues.

Let me tell you, these chips are amazing! They are savory and cheesy which is surprising with the notable absence of nooch in the ingredients! Another reason that these are far superior to Doritos (minus the whole lack of nasty ass dairy and chemical products)? Notice the lack of radioactive orange glow to the chips and eventually your fingers after you eat them. That stuff is a reminder for the rest of the day that you filled your belly with something that just doesn't occur in nature. I'm so glad that Beanfields chose me to try these products and that I could pay it forward! I hope you ladies like them as much as I do!

Monday Grub

Hey everyone. It's been a yucky, dreary day here in NY and that always makes me exhausted. I could barely keep my eyes open all day! I tried to take a nap before the gym but that didn't happen. Luckily I made it through my session with no problems :) My mood was reflected through my incredibly boring  meals. Tasty, but boring. Hopefully they will be more exciting tomorrow!

Breakfast was a cherry chocolate smoothie. For some reason since I got sick with my stomach bug a month or two ago, these smoothies haven't tasted the same. They used to taste like a chocolate shake, now they taste like crap. I don't understand why.


For a late morning snack I had some watermelon with some grapes.


For lunch I just had a half of an avocado mashed with salt and pepper served with one tortilla's worth of homemade gf tortilla chips.


Pre workout I had a homemade Orange Coconut Larabar (though I love Miss Rachel's term "Vavabar!"). This was probably the best thing I ate all day!


For dinner I was kind of hungry but really lazy from being tired from the crap ass weather and then exhausted after the gym so I decided that a big ol' bowl of cereal would be the perfect dinner. This is legit a big bowl... a cup and a half of cereal with a sliced banana and some unsweetened vanilla almond milk. And I am enjoying every bit of it. Sometime a bowl of cereal is just what you need :)

Pantry Challenge Kick Off!

Hey everyone! I'm writing this post feeling very accomplished. I woke up this morning and headed over to Whole Foods (the close one, yay saving on gas!) and picked up produce. My grocery bill for the week? $30!!! That is less than half of what I normally spend. That's awesome :) I got lots of stuff including broccoli, oranges, apples, carrots, zucchini, avocados, spinach and a mango!! Yum!

After I got home I tore it up in the kitchen and now I'm sitting here with a good base for my meals for the week in the fridge and a full belly. So lets check out what I made.


A big ass batch of quinoa! And may I state for the record this is the first successful batch of quinoa I've ever made. I don't know why but I seem to mess it up every time and it is always undercooked. This batch is perfectly fluffy and lovely. I am planning on using it in a few different ways so stay tuned this week to check that out.

The second thing I did was make a big batch of brown rice, most of which I used in...


The Vegg frittata that I saw Bianca make over at Vegan Crunk! I'm glad I checked out the recipe on The Vegg website when I did because it's gone now! I had to make the frittata from memory and I think I did a pretty good job!


Obviously I couldn't wait to tear into it for breakfast so I cut a hearty wedge and enjoyed it with grapes and the other half of my orange that I used making...


Homemade Larabars! I decided to make Orange Coconut flavor.  So good! I'm pretty set on snacks now so that is a huge help and will save a ton of $$ at the store. 

Orange Coconut Larabars

2 cups dates
1 cup raw almonds
1 cup dried shredded coconut
1 tsp vanilla extract (I used alcohol free)
zest from 1 orange
juice from 1/2 orange

Directions:
1. Add almonds to food processor and chop into small pieces.
2. Add the rest of the ingredients to the food processor and process until well combined and forms a sticky dough. Texture is up to your discretion, I like mine a little smooth but you can leave yours chunky!
3. Take dough from food processor and transfer into a loaf pan lined with plastic wrap.
4. Press dough down until packed very tight. Cover top with plastic wrap overhang.
5. Refrigerate for an hour until it firms up a bit.
6. Remove from loaf pan, uncover and cut into bars. Wrap each bar and store in fridge or freezer.
7. Enjoy!

 I'm going to take some time to plan my meals for the next few days. I'm trying to get more organized because I think that'll also help eliminate food waste.  Then I'm going to relax! I'm exhausted, I haven't stopped at all this weekend so it'll be nice to just be mellow for a bit.

    Fun Friday - Things That Rock My Socks

    Hey everyone, happy Friday! Hope you all had a great week and that you are enjoying the start of your weekend. I'm very happy that it is the weekend and tomorrow is a special day: my mom's birthday! We will be celebrating so I probably won't have a post up tomorrow but you never know!

    Anyway, keeping up the same Friday tradition I've had for the past few weeks, here are some things I'm into this week.


    I just joined Pinterest! I literally just joined a few hours ago so I'm working on it but definitely feel free to follow me! I can't figure out how to get the button on the side of my blog because for some reason Blogger will only add a URL and I have HTML code for it? Oh well, for now please just click HERE to follow! ;) If anyone has any pinterest advice I'd love to hear it!


    Another song that will be played out in a week but I'm loving anyway is Gotye ft. Kimbra "Somebody That I Used To Know." It's a great song and Kimbra's (the girl) part is pretty much the story of my life, Ha!



    The minute I saw Gabby's Raw Lemon Coconut Hemp Seed Bites I knew I had to make them... soon! I figured it was a perfect way to start my pantry challenge so after I got home from work today I made a batch for myself :) They are SOOOOO good and super easy to make. Thanks for the great recipe Gabby, I'm so glad I found your blog! 


    BUBBLE TEA!! I have loved this stuff ever since I was a grad student in Seattle (5-6 years ago) and there were 3 bubble tea places within 3 blocks of my apartment. It is tea with some sort of fruit flavor and tapioca pearls. It's so good and I hadn't had one in so long! I found out that a new place opened close to my house and they had bubble tea so I naturally made my way over there. This one is peach tea with tapioca pearls. Sorry the picture is so ridiculous, I was practically hanging out of the car taking it. The place was very small but cute, had a lot of different flavor options and even had a few vegan food options! None were gluten free but the bubble tea was enough for me. Before this place opened up you'd have to go to Flushing or Manhattan to get it and I'm never really in either place. It was incredibly sweet so I'll ask them to only put half the usual amount of fruit puree in there next time. Best. Discovery. Ever.

    And finally, the start of my pantry challenge this weekend is rocking my socks off! I already wrote up a list of dishes I want to make and I can't wait to start varying up my meals a bit. Hopefully the blog will perk up with some creativity this week :)

    Product Review and a Giveaway!

    Hey everyone! Hope you are all well. I'm very excited that tomorrow is Friday. Last night was a bit rough for me, I couldn't fall asleep at all! I finally fell asleep at 4 am and woke up before 7. Surprisingly I had more energy today than I anticipated I would.

    Last night I got home from my long day at work and was greeted by another very happy surprise!! Let me show you ;)


    A box full of Beanfields Bean & Rice Chips!  I was contacted by the company and asked to sample their chips. I was pretty stoked and said that I would be happy to and they sent me this huge box with bags and bags of chips! Right before my pantry challenge, ha!

    Beanfields products boast some pretty cool nutrition facts! First, they are made entirely of rice and beans, therefore the are gluten free (and also corn free). Also, if you recall I've mentioned a few times that rice and beans combine to form a complete protein (one of the reasons it is one of my favorite foods!) and one serving of these chips provide 4 grams of complete protein as well as 4 grams of fiber.  If all of that wasn't a good enough reason to try these chips, VegNews named them Best in Show for Best New Vegan Snack Product. Sold!


    I believe the Nacho flavor is the most popular and the one that was mentioned to me when I was asked to sample and review this product but they were kind enough to send me a variety of flavors. I received large bags of the Nacho, Sea Salt and Pico de Gallo flavors, and snack sized bags of the Nacho and Pico de Gallo flavor. I was pretty amped about the nacho flavor (think vegan doritos!) but I really wanted to tear into the Pico de Gallo chips so that's what I did. 


    Isn't it purdy? I needed a small snack anyway so I ate the snack sized bag of Pico de Gallo chips. Let me tell you, these chips pack a ton of flavor! If you like Bar B Que chips you will LOVE these! You get a smoky flavor right off the bat and sure enough there is natural smoke flavor in the ingredients. These chips were really tasty and indeed filling. I'm really looking forward to trying the other flavors!

    This is where YOU come in! I requested some extra bags so I could do a giveaway and they were nice enough to oblige! Not pictured are two large bags of nacho flavored chips!     Two Meals and a "Cleanse"

    Hey everyone! This is going to be a quickish post because I have to finish getting ready for my long day. To be honest I wasn't going to post today but I made two awesome meals and I kind of wanted to share them. I also wanted to talk about a decision I just made. I find that when I talk about it here I become more accountable. And I also get tons of awesome support because you guys are awesome!

    Here are the meals first:



    This first meal is the most recent and most successful use of The Vegg vegan egg yolk. This time I used 1/2 cup of water with 2 tsp of the powder. This worked better because it was enough for my personal blender to combine it completely (1/4 cup of water doesn't even come up to the blades and barely mixes at all!) so it was thicker and cooked up way better! I used it in a breakfast burrito and made it with a GF brown rice tortilla, fat free spicy refried beans, and tofu scramble with spinach with the vegg mixture. It was a little messy but so good! And super filling which is great for my long day because we have to eat between clients and sometimes it doesn't happen until late.


    I made a huge plate of veggies with hummus and stuffed grape leaves to bring with me. Carrots, celery (going to give it a try!), my fave Mediterranean hummus from Trader Joe's and some stuffed grape leaves. I also still have my seaweed snacks there because I didn't get a chance to eat them yesterday.

    So, I was thinking about another cleanse recently and this morning I realized that there isn't too much to clean up. I eat a lot of fresh foods and while I partake in just a few processed foods (mostly the refried beans I think) it really doesn't come close to the amount of fresh I eat. 

    I've decided that for the next few weeks until wedding season starts to pick up again and I hopefully start assisting again, I'm going on a spending strike. A major part of this means that I will be doing a pantry challenge! Looking through my pantry I've realized that I have so much good stuff that I haven't used yet. Quinoa, hemp seeds, beans, brown rice, dates, canned stuffed grape leaves (these were always back up because I find them greasy but I will drain them thoroughly!), etc. I spend too much money on bars and convenience foods when I have all of the ingredients to make my own. The only food I will buy from the store for a few weeks (until I dwindle down the pantry) is fresh produce. In addition to saving money on convenience foods AND prepared foods, I'll be saving money on gas. I travel an extra 15-20 minutes to the "good" Whole Foods because they have a bigger selection of prepared and packaged foods. I just need produce so I will go to the one that is only 10 minutes from my house. This will be great given the gas prices and how often I go to Whole Foods!

    Finally, this will help me bring more variety into my diet. I have fallen into a bit of a rut, just buying the same things every week and preparing the same meals. Now I'll be more creative in preparing different meals using different ingredients. I'm really excited about all of this and I think now is a perfect time to do this. I'm also thinking that it will help me stay busy and help my anxiety by focusing my attention elsewhere. I see only good things coming out of this :)

    A Normal Day, Finally!

    Hey everyone. I know my food posts have been lacking lately, mostly because my appetite has been weird and I just have been too lazy to take pics. The same happened yesterday, I photographed my first two meals then just didn't take any more pics. Today is a different day though and I took pics of everything so I'm going to include the two from yesterday and then today's meals.

    I'm starting to feel a bit like myself again. The anxiety comes and goes, sometimes intense sometimes mild. I feel better on average though which is a good thing. I had also contacted a chiropractor to try and figure out the whole shoulder situation but I found out that my insurance plan doesn't cover chiropractors so I had to take a different route. A few years ago before the problem had gotten really bad I saw a doctor that specializes in spine stuff (I don't remember the dr. term lol) and he was very nice so I'm going to see him next week and hopefully he'll order and MRI and we can start investigating.  Let's hope!

    Been laying a bit low on the upper body exercises because of the recent flare up. Hit the bag a bit yesterday at the end of my session but didn't go full power on that side. The workout was still pretty hard core, we kept up a good pace and did a lot of cardio drills and full body workouts. This morning's workout was 30 minutes of intervals on the arc trainer.

    Yesterday's breakfast was a smoothie. This one had 1/2 cup cherries, 1/2 cup blueberries, almond milk, chocolate vega shake & go powder and lots of spinach. It was kind of meh, I prefer all cherries but I ran out!


    For mid morning snack I had a pink lady apple with some Artisana raw walnut butter. OMG this stuff was so good! I need to find where they sell the small packets of these and stock up because the WFs I go to doesn't have the packets. The walnut butter was perfect on the apple. It tasted like a sweet treat instead of a healthy snack. Definitely recommend the walnut butter!


    After my workout this morning I had a cup of Multigrain GF Puffins with Unsweetened Chocolate Almond Breeze. 


    Late morning snack was a banana with a tbsp of pecan butter, some raisins and cinnamon. Very delicious.


    Sorry for the crappy pic but for lunch I had a tasty quesadilla on a gf brown rice tortilla. It was filled with fat free spicy refried black beans and lots of spinach.


    My afternoon snack will be Roasted Seaweed Snacks from Trader Joe's. Only 60 calories for the entire package, and it tastes soooooo good.


    Dinner will be leftover salad that I got last night. They make a huge salad which is beneficial for me because I get two meals out of it... and each serving only costs $2.25 for a fresh tasty salad. Not too shabby.

    Overall I'd say it is a pretty great food day. Hopefully work will go quickly. It's another beautiful, warm day and it always bums me out to be inside the whole day. Oh well, it is what it is.

    Toasty Sunday

    Hey everyone. First, I just want to thank you all so much for your kind words and support on yesterday's post. You are all very sweet and I appreciate all of your positive thoughts.

    Today was a toasty one here in NY. It was actually a perfect, beautiful day. I got to the gym as soon as it opened at 9 and got in some cardio. After that I visited my friend that just had a baby (such a beautiful baby, so teeny!) and then ran some errands, including a trip to Trader Joe's to stock up on essentials.

    My food has been strange lately so I'll just show you what I ate today (well at least what I remembered to photograph).

    Unpictured: Post workout I had a half of a banana and some almonds.


    Yesterday when we went to the outlets we had dinner in a Mexican restaurant. I had the other half of the wrap pictured above that was stuffed with rice, beans and veggies. It was really good and really filling, and that's why I had the other half for lunch today. I just ate the filling and wish I would have asked for it in a bowl instead of a wrap but too late. I just ripped the wrap open and ate the filling and I wish I would have taken a photo of the carnage. At dinner I finally drank my strawberry margarita I've been wanting since my birthday 7 months ago. Well half of it then I was pretty well buzzed and passed the other half to my bro. What can I say, I don't drink much ;)


    For a snack I had a grape fruit leather.


    And I decided to treat myself and enjoy an iced decaf soy latte with cinnamon. The weather was too good and it was the perfect way to welcome the warm sunshine. Between the coffee and the margarita I'm pretty well set on splurges and it is back to the veggies and green smoothies tomorrow.

    Dinner is some moo shoo veggies so I'm getting in some good veggies and the sauce is light so I'm pretty happy with that.

    Hopefully tomorrow will be back to normal. I'm noticing the bruising coming back on my body and a general feeling of fatigue so that means it's back on the high raw food train.  I've got some good stuff planned.
