Cookies!!!

Hey everyone!! Happy Saturday :) I hope you are all enjoying the day. I'm getting ready to head out on my last day of work before one day of freedom! I know it's hit or miss on whether or not I post on a day that I work a wedding but I had something fun to share with you so here I am!

I mentioned last week that it was my friend's birthday and that I had put together a relaxation kit for her. Included in that was two little packets of face mask powder, tea bags (special bags that brew in cold water and make iced tea! She said they were great and very refreshing!), a plastic to go cold cup (to hold said iced tea), face and body creams, home made trail mix (in a mason jar obviously) and a bottle of wine. I was going to make her a batch of cookies but as you know I worked every day and barely had 10 minutes to breathe so I just couldn't. Since I'm working with her today (I'm assisting someone else but she is the second photographer on the job) I decided to push myself to make them even though I was exhausted.

Check out what I made!


Check out these gorgeous Chocolate Coconut Thumbprint cookies! I asked the birthday girl what her favorite flavors are and she said chocolate, coconut, raspberry and pumpkin. I know that chocolate thumbprints would be a great way to incorporate most of those flavors!


I used Isa Chandra Moskowitz's Chocolate Thumbprint cookie recipe from Vegan with a Vengeance.
The only change I made was I rolled the cookies in coconut before I baked them the first time to add another one of her favorite flavors in. They worked out perfectly! 


If you want to make a Chocolate Thumbprint cookie definitely try this recipe. It came together really fast and cooked perfectly :)


I also had to show you this yummy meal. I wanted to eat the last of my tofu so I can move on from this soy frenzy I've been on and I figured why not go big? ;) I made a tofu scramble with tons of spinach and then topped it with Daiya. I covered the pan and let the Daiya melt for a few minutes then put the scramble on a tortilla.


My finished breakfast burrito (eaten for dinner). I bet it would have been even better with avocado!

Snack Time!

Hey everyone! Rushing today to get out the door for a wedding but here is a quick post with the two snacks that I made yesterday! It was kind of a hectic day and pretty brutal that I had to turn the oven on but I suffered through ;) And it was so worth it! Check out the eats!


How cute are these muffins?! These are Gluten Free Carrot Spice Muffins


I used my recipe for Gluten Free Carrot Spice Oat Bread with a minor tweak. I basically just left out the white sugar. I thought it would be sweet enough with just the maple syrup, bananas, carrots and raisins. I was right! No white sugar necessary so these cuties are naturally sweetened. And the best part? I plugged the recipe in to the Lose It! app and each muffin is less than 200 calories! Gotta love that! Oh and I cut the baking time to 22 minutes :)


Here is the inside! It wasn't too sweet but just sweet enough. The only thing was that they stuck to the paper a little bit. Next time I'll bake them with no paper and just lightly spray the muffin tins. This is the perfect snack to bring along when I'm working weddings! I popped 8 of them in the freezer so I'll have these for a while :)

Here's the amended recipe!

Gluten Free Carrot Spice Muffins!

Dry Ingredients:

1 1/2 cups oat flour
1/2 cup whole oats
1 tablespoon ground flaxseed
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ginger
1/8 teaspoon ground cloves
1/2 teaspoon salt

Wet Ingredients:

1/3 cup maple syrup
1 medium banana, mashed
1/2 cup plant milk (I used unsweetened vanilla Almond Breeze)
1 tsp vanilla

Add In Ingredients:

1 1/2 cups shredded carrot
1/4 cup raisins
1/4 cup chopped walnuts

Directions:

1. Preheat oven to 400 degrees. Spray a loaf pan with non-stick spray and set aside.
2. Mix together all dry ingredients in a large bowl. Make sure all ingredients are well incorporated. Mix wet ingredients together in a separate small bowl. Add the liquid ingredients to the dry and stir to combine.
3. Add the carrots, raisins and walnuts and mix entire batter together. It will seem like there are more add-in ingredients than batter but just mix together as best you can.
4. Scoop batter evenly into muffin tins. Bake for about 21-23 minutes until there is a little resistance in the muffins.
5. Remove from oven and cool in muffin pan for about 5 minutes. Transfer muffins from pan onto a cooling rack and let rest until completely cool. 



I finally got around to making my Kale Chips! Not just any kale chips though. These are Cool Ranch Kale Chips!  I used this recipe :)


These are SO DELICIOUS! They are really savory and has really great flavor. The chips are super light and they came out great in the dehydrator. The only thing is that I'll probably puree the onion next time because I feel like it is weird to have chunks of onion on my kale chips. Or at least try to dice them even smaller. Anyway, dehydrator success yet again! I'm on a roll with it now ;)

Things That Inspire Me...

Hey everyone! First of all, thank you so much for all of your support through the process of figuring out what the hell is wrong with my neck/back/shoulder. It means a lot! My MRI went pretty well I think. I am actually now pretty convinced it is indeed my neck. While I was in there they stabilized my neck and it was almost like it was in a brace. I have NEVER felt as much discomfort in that shoulder or arm in my life... it was actually quite painful. HOWEVER, when I got off the table and out of the stabilizer brace thingy, my shoulder actually felt better than it has in a long time. Very little discomfort, stretched out and just better. So much so, in fact, that my training session today was amazing. 7 rounds on the heavy bag with zero problems, no fatigue and even my breathing felt better. It was crazy! I am waiting to hear back from my doctor about when I can get the results but I'm feeling pretty optimistic. There was one casualty though. I had to take out all of my ear piercings and go figure, one actually closed up IN AN HOUR AND A HALF! And I had that one for 10 years. The scar tissue in the bottom hole of my industrial just completely closed it up. It is sad because I loved that piercing but I guess if I am on the road to getting better it is worth it.

I went to Whole Foods tonight to replenish my grocery supply. I walked out with mostly produce since I'm still working on the pantry. I got some carrots, cucumber, spinach, artichoke hearts, portobello mushrooms, and cauliflower. I also got 3 of the small Vita Coco coconut waters (on sale 3 for $5, I got 2 pineapple and one peach and mango) because it is the only brand of coconut water I can actually get down. I think Zico is kind of yucky :X I have some great meals planned so sit tight :)

I have been doing a lot of thinking about life and where I am and where I want to be and realized that I have a long way to go. What I'm doing and what I want to do are two very different things but I've decided that life is too short and now is the time to start chasing my dreams and make things happen for myself. I have some projects planned for myself and I'll fill you in on them once I get rolling and make a good deal of progress. Exciting things are happening because I've decided it is time for me to focus on becoming the person that I dream of being.

Which brings me to the real subject of this post, inspiration. I know that I've been bringing it up a lot, but I'm REALLY happy that I joined Pinterest. I know that it is a great way to promote my blog and all of that stuff, but I have found that I love it more for the inspiration it provides me. I love seeing things that are cool and then coming up with ways to make them my own. I decided that since I don't have food photos for you today, I'd show you some things that are inspiring to me that I've found on Pinterest.


Repurposed Etched Spice Jars. This DIY project is beautiful and gives your kitchen such a unique look AND is a great way to recycle your old bottles. I'm really loving these.


How cute are these Oreo Pops!! I love things on a stick and these Oreos are so easy but look really great! These will be a great holiday treat using Candy Cane Joe Joe's.


How hilarious is this mustache Rainbow Cake? I've always wanted to try making "tie dye" cakes and this one is just too cute. I need to get on that :)


I'm pretty much obsessed with these Melted Ice Cream Cupcakes. They are so adorable and I wish I had though of them! These inspire me a lot to really push my creativity :)


Finally, this presentation of a beautiful summer fruit salad is brilliant. I tried to click back to the source but couldn't find it. I think it is so simple but really smart and pretty to look at. 

So the moral of this really long (sorry) story is that I've become really inspired by the things I've seen on Pinterest and just all around me and I'm hoping to be able to use this inspiration to create some new, fun things. I'm also hoping that this inspiration will find its way into some projects I have in my head that I'm really pushing to make a reality. It's time for change my friends. And I'm bringing you along for the ride!

Sorry this has turned into a mammoth post! Just one more thing though. As of last night, I've gotten my paws on tickets to the UFC fights in Jersey on Saturday! I'm so excited because I've never been to live fights AND to make it even better, Nate Diaz (one of my favorite fighters) will be fighting in the main event and will be cornered by his bro (and my all time fav fighter) Nick. SO. AWESOME. Yay!

Fun Friday - New Things I've Tried

Hey everyone. I figured since I've been trying a lot of new things this week I'd use that as my fun Friday post. Check out a few things I've finally tried.


The first new thing I've tried is Kombucha. I won't lie, I've bought Kombucha at least 3 times before and never had the guts to try it before the use by date had come and gone. I finally decided now is the time and bought 2 bottles of Synergy brand Kombucha. The one I tried first is the "Guava Goddess" which is pictured above and I have a bottle of Gingerberry sitting in my fridge.

I was afraid to try it. I smelled it like I smell everything I am about to ingest and immediately regretted it. I finally tried it and I won't sit here and blow smoke up anyone's ass by saying I loved it because I didn't. The thing is that I didn't hate it. As I drank it the taste grew on me a little bit. I am not running to the store to stock up on cases of Kombucha but I'll definitely try the other flavor and will partake in it once in a while. So I'll give this a so/so. And it isn't because the brand is bad, it is because I am still getting used to the vinegary effervescent taste and feel of it... and the weird chunks of culture floating in it.


The next thing I tried was The Vegg vegan egg yolk powder stuff. I finally got my act together and made the mix in the proper proportions and added it to a tofu scramble. The stuff is crazy it smells like eggs thanks to the black salt. It still ended up being a bit different than I expected in that it never crisped up like I thought it would but it did add a nice taste (nooch and black salt will do that) to the scramble which had onion, zucchini and spinach. I liked the flavor and I think I'll have to try it in a different preparation to see how it works. Just out of curiosity I think. Oh and I ate the scramble with a few home made kale chips.


I saw Angela's Mess Free Banana Split Bites post yesterday and immediately knew that I was going to make them AND that I was going to add my own twist to them. I figured that it would be a great vehicle for the Artisana pecan butter I opened up yesterday so decided to make little banana with pecan butter sandwiches. You can see the "naked" ones above.


After I made my little sandwiches I melted some vegan chocolate chips and drenched the sandwiches in them. They look messy but I really didn't care. I popped them in the freezer to harden up which is where they are chillin (get it?) now. I'll show you what they look like all frozen and delicious looking when I eat one.

So these are the things I've been trying this week. Lots of good stuff, can't wait to dive into the banana split bites. I don't have much of an appetite which is part of the reason I haven't been showing full days of meals over the past few days. When it comes back I'll be happy to try these awesome treats and show you some full days of good eating.

This Is What I Eat on Vacation!

Hey everyone! Got home from my long weekend in Orlando. It went by so fast!! I'm bummed that it's over but I had an amazing time. It was great to see my friend, I ate some amazing vegan food and went to one of the most amazing farmer's markets I've ever seen.

I have a lot of food to share with you so I'm going to try and organize it so it makes it easier for you to read (and for me to post!). I'll share my restaurant meals, my cooked meals and something I picked up from the farmer's market :) I took all of the pics with my phone so the quality isn't great but you'll definitely get the point. I used instagram on some to spruce them up so the color may vary a bit but they look ok I guess! Let's dive in!

So first I'll share two of the three restaurant meals I ate. I didn't take a pic of the third because to be honest it made me really annoyed. I'll explain in a second.


I actually ate this absolutely DELICIOUS sandwich for lunch today. I usually go to Ethos Vegan Kitchen for brunch when I'm in Florida but I wanted to try it for lunch so we went somewhere else for brunch (which subsequently served me the meal that annoyed me). I got the "Hippie Wrap" in the gluten free option minus the banana peppers. I chose the fruit for my side. This was AMAZING. Ethos is one of my favorite restaurants in Orlando which is why I go back every time I'm there!


This meals is from The Loving Hut! I actually ordered the "Combo #1" but was given the Combo #2. It originally arrived with a faux beef skewer type thing that was definitely made with wheat gluten which I wasn't really interested in. I didn't want to make a big deal out of it since the summer roll and rice were correct. Instead of the spring roll I was supposed to get veggies but it was fine so I just asked them to switch the wheat meat for the tofu I was originally supposed to get and all was well. It was SO GOOD! This is another place I come every time I'm in Orlando. They usually get the order right but the girl who took our order was new. No big deal though, it was still delicious!

Quick story about that third restaurant. They had a salad that looked great...basically greens topped with supposed fresh fruit. I expected beautiful fruit to be sitting on those greens...instead I saw a sparse, sad looking salad with minimal fruit that was far from fresh. The thing that annoyed me about it wasn't necessarily that the salad was kind of pathetic. It was that I was sitting in the restaurant staring out the window at the farmer's market. It drives me nuts when restaurants don't even think to utilize the beautiful, fresh, local ingredients located literally 100 feet from their door. So ridiculous.


Speaking of the farmer's market, I went to the Winter Park Saturday Farmer's Market and was completely blown away. They even had a small stall with raw shakes and some tea blends and a few raw things such as crackers, soup and moon pies. I have been dying to try raw crackers so I picked up a package.

I tried to eat a lot of healthy raw food in between some indulgences that I'll share at the end of this post. They were fairly consistent with what I eat on a regular basis.


A beautiful salad of greens, cucumber, carrots and some avocado. I dressed it with extra virgin olive oil and lemon juice.

Snacky type lunch plate with carrots, an orange and some of the raw crackers from the farmer's market with mashed avocado. So good!

I tried to be somewhat virtuous with my food choices during the trip but definitely wanted to indulge a bit as well. As part of our tradition I made a really great dinner followed by dessert, both of which were decadent and rich and 100% amazing.


Check out this amazing, decadent mac n cheese! I used this recipe and it was so good. I made it gluten free with rice pasta and gf flour and left the breadcrumbs off the top. Next time I'd add a little more seasoning but it was creamy and amazing!


I forgot to take a wide shot but I served it up with some amazing brussels sprouts that I picked up at the farmer's market and roasted, as well as some carrots. It was a really delicious meal and totally worth the splurge!

And every decadent dinner should be followed by an equally decadent dessert!




You seriously have to try these! They are amazing! I was super careful to avoid wheat the rest of the weekend because I knew I would be eating this and wanted to make sure it wouldn't effect me that much and it didn't. These are great, impressive and pretty easy!

So that's what I ate on vacation! I indulged a bit more than I typically would and it is amazing that I came home craving healthy, raw foods. I guess that is a great thing and shows just how much my tastes have changed over the past month or so. It's a great feeling!


It's back to reality for me now. Here I am very relaxed and happy (although some makeup would make this photo a bit more flattering ha!) before I left to come home. Hopefully I can keep this feeling for a little while before I settle back into my reality.

Saturday Eats and Treats!

Hey everyone! Happy Saturday :) I had a crazy morning and afternoon and now I'm just relaxing in my warm pjs under my covers watching fights ALL EVENING leading up to the free fights on Fox tonight. I'm very excited! It is rare that I get to see a main event because I refuse to pay $50 for PPV every few weeks so I always make sure I get to check them out when they do the free events.

I woke up early today and was at the gym by 7:45 am. I got in 45 minutes of cardio then came home, took a quick shower, made my breakfast and finished up my boss' birthday cake.  Today was his birthday and I always make the cake for an office birthday (except mine ha!) and I had such a cute idea for his!  Check it out!


It's a sandwich birthday cake! I made the cake and frosting last night and cut up the strawberries. All I had to do this morning was put it altogether. Prepping everything ahead made all the difference because I knew I would be tight on time.


I decorated it to look like a cream cheese and strawberry sandwich. The cake is Isa's vanilla cake recipe from VCTOTW in the sandwich bread mold and baked for about 55 minutes. The frosting is the basic vanilla frosting from VCTOTW and the fresh strawberries were gorgeous and super sweet. I didn't partake in the cake because it obviously wasn't gluten free but it was definitely a big hit!

So now that you saw what I didn't get to eat, let's check out what I did eat :)


Breakfast was another sludgy looking green smoothie. This one had a small frozen banana, the rest of the strawberries from the cake (about 7?), some Vega chocolate protein powder, a cup of almond milk and a big ol' handful of fresh spinach. It was really good but I almost regret using the strawberries in there because they were so sweet and delicious and fresh but they got lost in the smoothie. Oh well, you live and learn.


I was starving when I got home from work so I made some avocado toast and cut up a HUGE carrot. It was so good.

After lunch I snacked on two stuffed grape leaves and a tbsp of hummus. Sorry no pic!

Recipe - Cookie Truffles!

Hey everyone! As promised, here is the ridiculously easy recipe for the cookie truffles that I made for the holidays. I honestly don't remember where I saw the recipe to begin with because I made it when I was not vegan (just vegetarian) and it wasn't hard so I just remembered it.

Cookie Truffles

Ingredients:
1 package sandwich cookies (the original recipe called for Oreos but I made mine more festive for the holidays by making a batch with Candy Cane Joe Joe's and a batch with Newman O's Ginger Cookies)
1-8 oz tub of tofutti cream cheese
1 package vegan chocolate chips (if dipping the truffles)*

Directions:
1. Process cookies into fine crumbs in the food processor.
2. Mix softened cream cheese in with crumbs. Combine completely.
3. Refrigerate for at least an hour to let it set a little.
4. Roll mixture into small balls (I used a medium sized ice cream scoop). Refrigerate again until firm.
5. If dipping, melt chocolate chips and dip truffles until evenly coated. Refrigerate to set the chocolate coating.
5. Enjoy! 

*Note - Dipping any chocolate or peanut butter cream cookies in chocolate will always be delicious. I didn't know how the ginger cookies would taste so I rolled them in powdered sugar. They looked great for a little bit but then condensed and formed more of a glaze (which isn't bad either). You could also try vegan white chocolate for those.

Holiday Baking Day 2: Cookies and Bars, Oh My!

Hey everyone! Hope you all had a lovely weekend. I spent many hours baking yesterday and several hours making my no bake treats the day before :) You saw the no bake so here is what came out of my oven yesterday!

1 batch of Magical Coconut Bars from Vegan Cookies Take Over Your Cookie Jar! Chosen by you my dear readers!


Cranberry White Chocolate Chip Biscotti, also from Vegan Cookies Take Over Your Cookie Jar! It got eliminated from the Holiday Baking Bracket but it is one of my favorite recipes and it is festive for the holidays so I made them anyway. They are SO delicious, I highly recommend making them!

As a little side note - the second batch of biscotti was my last batch of baking for this season. Naturally, I run out of arrowroot powder on the first batch. I had made the Magical Coconut Bars, 5 dozen Almond Joy Cookies and 1 batch of biscotti in a row. I was on a roll and then the momentum was totally lost when I had to go and get arrowroot. Any bakers out there I'm sure will understand what a major bummer it is to have to leave in the middle to grab one ingredient. Oh well, I finished soon after and they will be consumed shortly :)

I will definitely have to continue doing giveaways for all of you throughout the year to share the baking love after the holiday season has passed.

Holiday Baking Day 1: No Bake Goodness!

Hey everyone! My internet seems to be ok with uploading photos today...although VERY slowly! I started this post yesterday with the intentions of getting it up last night but I couldn't get the photos uploaded. So here it is hopefully with all tenses edited ;)

I didn't post Friday because I ended up shooting a small party. It was a nice last minute job which certainly helps this time of year where wedding season slows to a halt.

I had to work very early yesterday morning for a few hours in the studio then I headed over to the gym for a training session. I scheduled a third this week because I was feeling extra aggressive :X

After I got home I spent a few hours making some no-bake treats to give away this holiday season. Today I spent ALL DAY baking many different kinds of cookies. I'm glad I split it up this way because making the truffles (and DIPPING the truffles) took a lot longer than expected...mainly the dipping.

Keeping Promises & A HOLIDAY GIVEAWAY!

Good afternoon everyone :) I hope you are all enjoying this gorgeous Sunday. It has been unseasonably warm the past few days, I feel like it is spring! So beautiful.

I woke up super early this morning. I was at Whole Foods when they opened and I accomplished a lot before most people even crack their eyes open. I decided that I would finally fulfill a promise I made a while ago.

I love baking. My biggest problem with this business is that I have a hard time accepting payment for the things I bake. A tradition I have is that I'll bake my friends and family treats to suit their taste on their birthdays. In March I made Alicia Silverstone's Chocolate Peanut Butter Cups from The Kind Diet. The birthday boy was kind enough to share with some other friends and they were a big hit. So much so that I get asked to make them on a regular basis by one of my other friends that tried it. I kept promising I would make them, the latest time was that I'd make them for him for Thanksgiving. Thanksgiving came and went and still no peanut butter cups. I felt guilty so I made it my project for today.


I made them minis by using a mini muffin tin. They made A LOT. Like 3 dozen a lot. I gave him most of them but kept some to give out to a few others. 


I packed them up in this holiday tin because it was the only one I had :X They are 3 deep, I think I got 22 in here. 

I ran them over to him and he was so surprised and happy! It felt good to follow through on a promise. I can't wait for the holidays! I love spoiling people with yummy vegan treats! :)

Speaking of which, I've decided to host another GIVEAWAY of yummy vegan baked goods! I'll put together an assortment of treats that I'm baking this year for one lucky winner! All you have to do is comment on this post and tell me your favorite holiday treat! I'll choose the winner on December 4 using the random number generator thing. Getting Ready For Thanksgiving!

Hi everyone! Hope everyone is having a lovely (short) week so far! I had such a fun morning today :) I started to get ready for Thanksgiving today and I love being able to get into the kitchen and blast a fun poppy playlist and have a little dance party while I work. And that is exactly what I did. It was so fun!

I decided to make a fun little surprise for my brother. He tried chocolate covered potato chips at the Chocolate Trade Show a few weeks ago and loved them. I decided to surprise him by dipping some chips to bring on Thanksgiving. He does a lot for me so I thought it would be a fun treat for him. Can't wait to surprise him!

I had a little extra chocolate melted so rather than waste it I dipped a few of my Candy Cane Joe Joe's in it. They are now in my freezer for safe keeping ;)



All I wanted for breakfast was clementines so I peeled up 4 and had a pile of citrus awesomeness. So good, exactly what I wanted!


For lunch I am currently working on a plate of roasted brussels sprouts, roasted cauliflower, some stuffed grape leaves and a pickle. SO good!



For dinner I'm bringing this spinach salad I bought from Trader Joe's. It is a spinach salad with quinoa, carrots, dried cranberries (which I'll pick out because it is all sweetened and sugary), chickpeas, edamame, pumpkin seeds and grape tomatoes. It comes with a carrot, ginger dressing. There is a little sugar in it but I really think the amount in negligible so I'm debating if I'll bring my own dressing or not.

I decided that Thanksgiving will be the end of my cleanse. I'm going to continue to eat clean, but a little added sweeteners (like maple syrup or agave) are fine in small amounts. I'm really happy with how I did and I feel great and I plan on continuing to eat this way, but I don't want to start (or re-start really) a pattern of being obsessive about things like maple syrup in every bite of food I eat. This is meant to make me healthier as a person, and also to help me have a healthy relationship with food. Time will tell I guess.
