My breakfast was so good! I had breakfast quinoa! I basically made it the exact same way as oatmeal. I took some cooked quinoa, added it to a pot with some almond milk, a little stevia and some cinnamon. I cooked it down until the milk was mostly absorbed then I added some raisins. After the rest of the liquid absorbed I added some sliced almonds and a half of a banana. It was so delicious!
For late morning snack I'm going to have the other half of the banana and a half of an orange.
Check out this beautiful stir fry for lunch! Tofu, broccoli, spinach, zucchini, onion and carrot. This is going to be so good!
For my afternoon snack I'm going to have some roasted seaweed from Trader Joe's. Mmm.
My dinner is actually already at work but it is just some raw celery, carrots and tomato with some hummus. Simple but delicious.
I'd say today is going to be an awesome food day. I think that will help me get through the 10 hour work day. I have an appointment with the spine dr. tomorrow so hopefully he'll put me on track to finding some relief for my neck, back, shoulder issues.

I hope you feel better after your doctor's appointment tomorrow. I still don't understand how you make it through 10-hour work days. I'd be dragging myself home every night.

Thanks Sage, I hope so too. Trust me, it isn't easy. It drives me nuts, sitting for so long is probably taking a toll on my back/neck and my eyesight has gone to crap. There are days where I'm crawling out of my skin!
DeleteDefinitely give it a try, it was so good! You can change up what you put in there to your tastes, I bet coconut would be awesome in there!
That tofu stir-fry looks yummy! And I love those roasted seaweed snacks. I buy an Asian brand that I get at my neighborhood Vietnamese grocery, and I keep them on my desk for a low-cal snack option.

DeleteI always think you must take in a very low amount of calories! Especially for someone who works out so hard. I aim for around 1800 but generally am more like 1600, far as I know (I track it on sparkpeople every couple of months to see). Looks tasty as always though! I love quinoa porridge. :)
ReplyDeleteYou are right, there are some days where my calories are too low. I have a hard time balancing sometimes, especially when I have to bring my meals because I have to worry about what to bring, how to bring it, etc. I usually try to compensate with high calorie foods like avocado, nuts, etc. but today it didn't really get in there. I made the stir fry with sesame oil which bumped up the calorie count a little but it was still a bit low. Still working on the balance. I'd love to see what you eat in a typical day to get to 1600 because I feel like we eat pretty similarly.

DeleteThanks, I hope so too. I'm annoyed with the discomfort and even more annoyed that in the 3 years I've been seeking out help for this problem no one has ever investigated in, and it has gotten worse. It could have been prevented.

ReplyDeleteYou are right, today was a bit low. SOmetimes I have a hard time balancing everything and adding enough high calorie foods. I am also a grazer and tend to eat a few bites here and there which is why I typically would say that it wasn't too low but today I didn't graze and I didn't have enough high calorie foods. Working on finding that balance!
