A Few Meals

Hey everyone! Sorry I didn't post yesterday. It was my first day back at work, it was a ten hour day and I came home with a headache. No bueno. Today was much better, I'm feeling a lot better now and no headache! Yay!

Check out a few of the meals I've consumed over the past few days.


Swiss chard wrap! This one has hummus, sun dried tomatoes, carrots and mung bean sprouts. I read in CSD that these sprouts are SUPER good for you so I snatched them up from the store and have been adding them to everything.


Trader Joe's minestrone and an apple makes a quick lunch.


Now THIS is a smoothie I can get behind! This is the Carrot Cake Smoothie by Angela at Oh She Glows. It was SO delicious! It is a veggie smoothie I can get behind. I made a few adjustments. I used 2 carrots instead of one, used the flax seeds instead of chia, didn't use protein powder because I don't have vanilla and I blended a tablespoon of shredded coconut right into the smoothie. It was amazing and I was able to enjoy a veggie smoothie :)


Chopped salad. This one has greens, mung bean sprouts, carrots, cucumbers and sun dried tomatoes. Very delicious.

I'm not gonna lie, I was quite sad when I was supposed to be at my training session today. Even just taking a week off is a major bummer for me, but I know it is really important for me to rest until I'm all better, then I can hit the gym hard again. Can't wait :)

  1. It's really hard to go wrong with carrots. :) That cup you have your smoothie in is really cute - is it glass or hard plastic? And that salad is so pretty, it's everything I want to eat right now!

    1. The cup is hard plastic. I got a reusable cold cup and hot cup to try and cut down of paper cut waste. The salad was delicious and I anticipate eating the same exact thing for lunch tomorrow :)

    1. haha nope! Trust me working was not the first thing on my list of things I wanted to do but I couldn't miss any more work. If I were really overdoing it I would have gone to my training session but I showed some restraint ;)

  4. Beautiful! Your chop salads are always a source of envy; they are always so bright and tasty-sounding! I bet the wrap was really good as well.

    1. Both were quite delicious and so easy and fast to make! You should totally get a chopper. For some reason I love chopped salads and find them so much more delicious...I think because everything gets so mixed together.

      I do have to work this Saturday, I want to try and make up some of the time I missed! 2 days off is a lot of time when you don't have sick days...

    2. While I was out today, I checked out a few choppers at Bed, Bath & Beyond but didn't love what I saw. What kind is yours? Do you just throw everything in?

Basically I just put the ingredients together in a bowl like I did here: http://thisiswhatieatvegan.blogspot.com/2012/01/crazy-sexy-diet-cleanse-day-3.html you can see what the salad looks like before I chop it. I use a mezzaluna type chopper. http://www.amazon.com/Mezzaluna-Herb-Chopper-Cutting-Board/dp/B004M6LIRW/ref=sr_1_30?s=home-garden&ie=UTF8&qid=1327196481&sr=1-30 that is the one that most resembles the actual chopper... I got mine for like 6 bucks. I'll post a pic of it if you'd like.

    1. Thanks Nikki! The smoothie was delicious and I just got some vanilla protein powder (not so shockingly I only really buy chocolate) so I bet it will probably taste even better next time. Back in the routine for sure but looking forward to sleep tonight :)

  6. Haha! That carrot cake smoothie looks so much better than those green mystery smoothies--I'm not gonna lie! I'm still building up the courage to try the recipes from CSD.

    1. Thanks Sage! I really recommend trying the smoothie as a way to start drinking veggie smoothies. I'll probably start adding greens to it slowly too. The recipes in CSD are actually really lovely with tons of beautiful, natural flavor. You can also build up to it by making meals that are 60-80% raw veggies (a big salad always works) and the rest of gluten free grains with a little protein. The Buddha Bowl is a really great way to ease in I think!

      Try just easing into it, making one change at a time. Maybe just try making sure you eat a little more raw food every day. then take it from there :)

  7. Glad you're feeling better. It looks as if you're eating well even though you're not officially "cleansing." The Swiss chard wrap looks good. I have some chard in the fridge right now and trying to think of a new way to use it, but but I'm not sure I'm up to eating it raw yet.

  8. Thanks! Swiss chard is a lot more mellow raw than I thought it would be. I can't do raw kale but I can do raw swiss chard. I would definitely try using it as a wrap!

  9. You and Maud with your wraps!! Always an inspiration and one well needed! Your wrap looks so perfectly enticing and full of the right balance of textures! I hear you on missing workouts. It snowed here this past week and I haven't been running for 5 days!! I'm getting fat and lazy. I could have gone today, but didn't...LAZY. But tomorrow, I'm back to the regular routine, which I know will feel good.

    1. Maud was my swiss chard wrap inspiration! I literally sat on my bed and had a pity party for myself while I was supposed to be at the gym on Thursday I was that bummed about it. I am going back tomorrow and I can't wait and I'm hoping that the workout won't be too rough since I've been out of the loop for a week. I envy you and everyone else that runs. I've been telling myself that I'm going to get into it and I just haven't yet. I just have to do it.
