Typical Tuesday

Hey everyone! Going in to work in a few but I figured I'd write a quick post so I can just relax when I get home after 9. Hope today finds you all well, getting very excited about leaving for Orlando Thursday evening, I just hope the time goes quick!

So check out today's grub.


For my first breakfast I had a half sized Cherry Chocolate green smoothie. To be honest I wanted something else but I still wanted to get the greens, probiotics, omegas and protein so I went for a half serving... then a few hours later I made what I really wanted...


A slice of gluten free Rice Almond toast with a tsp of all natural peanut butter and banana. It was SO GOOD! I haven't had peanut butter in so long.


For lunch I had a big chopped salad with a half of an avocado on top.


For my afternoon snack I'm bringing an orange.


For dinner I'm bringing some stuffed grape leaves, carrots, tomato and hummus.

Been feeling kind of blah lately. Hasn't been a good few weeks. I hope that these next 3 days of work go quick because I really need a vacation. I'm going to regroup and then I really want to kick my training into high gear. I've been watching videos on youtube of my favorite fighter and his training and work ethic is so inspiring that it makes me realize that I'm actually quite lazy. Oh, and did I mention he eats a mostly raw vegan diet? Yeah. I need to start running again, I need to start doing yoga again (connects breath to motion, improves flexibility and balance, and will hopefully help with my pinched nerves bc my shoulder has been acting up), I need to start shadow boxing and doing things at home. I need to kick it into high gear. 

Hope you all have a great day! I'll try and post one more time tomorrow before I go (I definitely won't have time to post on Thursday). If I don't sit tight, I'll try and take as many awesome vegan food pics as I can!

    1. Thanks Bianca :) I know I'm not actually lazy in the normal people sense, I'm actually quite active...but I feel like I could be doing more to achieve my goals. That'll change though! I love avocado too, it is slowly becoming my favorite food! Rice and beans with avocado is my idea of the perfect comfort food.

  2. Sorry you've had a rough few weeks. January was totally like that for me; it left me feeling a bit defeated. But, things are going better now...hope you have a great vacation. Sounds like fun! Can't wait to see all the fun pics from it.

  3. Hooray for the Mazel mug! I bet the pb & banana toast really hit the spot. Beautiful salad, as always!

    I hope the days go quickly as well - you deserve a fabulous vacation! It's essential to have time off and take care of yourself, and spend time with people you adore!! In case I miss you tomorrow, have a wonderful trip. :)

    1. Haha yes the mug is back, minus the coffee though. It's been so long! The pb and banana was so delicious I'm so glad I had it.

      Thanks so much Ingrid! I think I deserve a break too :) Vacations also stress me out because I don't get vacation days so it is actually a financial burden but sometimes you just have to suck it up. I'll definitely make sure it is worth it though!

  4. You totally deserve a vacation! Time to recharge and refresh. :)

    Have you tried Earth Balance peanut butter? It's my favorite because it's less sweet than other peanut butters. Of course, that's the same reason why Chris won't eat it.

    Hey, any idea how I can change my profile to a generic name/URL when I'm commenting here? It's linking to my old Blogger account. I'm self-hosted through WordPress.ORG (not .com) so I can't choose WordPress from the drop down menu. Help?

    1. Thanks Sage! I've never tried EB pb...99% of the time I eat almond butter and the peanut butter I had was actually WFs unsweetened pb so there is no sweetening in there at all. I should check out the EB though!

      I have no idea how you would be able to change your profile except to edit your Google profile to update it to a new generic name and to include the new URL? That way your google account would have the info you want? Otherwise I don't know! Sorry!

    1. Haha nope no Disney this time. We were going to go to Epcot one day but the tickets are so expensive! We are going to try and get down to the beach one day which will be really nice!

    1. Thanks! I wish the toast was raw but it is made of rice and almonds. It is the same brand as the millet toast I get, and it is also really good!

  7. That stinks that you've been feeling blah lately. Maybe it's just the time of year?

    Your salad is gorgeous (as always!) and I love how the banana and toast look like a smiling face with many eyes. Or maybe it just looks like that to me.... :o

    1. I hope it's just the time of the year. It seems to be going around I guess. I'm hoping things will pick up after my trip!

  8. I love peanut butter and banana bread - always delicious and simple! Also - I like the lunch idea - hummus with mediterranean fixing is always the best!

  12. Chopped salads are daaabest! I could really go for one right now, but it would require me to walk 3 blocks to the grocery store. And I'm a little lazy today. The rest of your eatins look good, too!

    2. Seriously, your salads always look SOOOOOO delicious. And now that the pneumonia is gone, I got my wisdom teeth cut out and am avoiding eating anything that could potentially get stuck in the globs of blood currently inhabiting the space where my teeth used to be. But damnit! I'm eating a salad tomorrow. You just make them look so good.

      PS - what's in that salad? ;)

    3. Oh no! Well maybe you should hold off on the salad until you can enjoy it? I hope you feel better soon! My salads are always the same. I used mesclun or spring mix salad greens and I add cucumber, carrots, and sun dried tomatoes. This one has avocado too, obviously :) I'll probably add avocado to my dinner salad tonight. Yum! I'm totally addicted to chopped salads!
