Spin off of my Pina Colada Smoothie. The only difference is I used mango instead of pineapple. It was really good but it was really sweet so I only drank half and I'm saving the rest for tomorrow. It's the same reason I only have the pina colada one once in a while but it's so good :)
Late morning snack will be a pink lady apple.
For lunch I made these gorgeous swiss chard wraps! Hummus, cucumber, carrot, sun dried tomatoes and sprouts. Look how beautiful it is!
Dinner will be roasted chickpeas, roasted asparagus and some carrots. Simple but I know it'll be delicious!
If I'm hungry when I get home I'll have some kale chips. It is the perfect night time snack because it is a little salty, nice and crispy but nutrient dense and super low in calories :)
I hope that you all have a great day! Hopefully my long day goes quickly but I get the feeling it won't. Oh well. We don't have any appointments on Saturday so I may take off if we don't schedule anything between now and then. That'll be nice :)
Your wraps look really nice. When I make lettuce wraps, they fall apart so easily. Maybe I need to be using Swiss chard?

DeleteAh! So much food here that I want. It's been a long time since I've had a swiss chard wrap, but they're lovely - the texture of raw chard is really pleasant. Also, asparagus! Why have I not purchased asparagus yet? Also, kale chips! Yarg! Thanks for reminding me of awesome food that I've managed to forget about.

DeleteHooray for Pina Colada smoothies! I find that using water instead of almond milk lightens the sweetness. Then again, if you're using a protein powder, it is probably better with almond milk!

I should try it with water. I find that the "tropical" smoothies are very very sweet so I'll probably just have them once in a while OR I was thinking about freezing them into ice pops! That would be so fun!

DeleteSwiss chard is one of my favorite greens, and the wraps look beautiful. I think sun-dried tomatoes are a great addition, but I never thought of using them that way - so thanks for the tip. Did you roast the chickpeas yourself? How do you do it? They sound like something else I'd like to try.
ReplyDeleteTHanks! I am a total sun dried tomato freak, I use them all the time. I do roast the chickpeas myself, it is super easy and SO delicious! Basically I just put the chickpeas on a pan that has been sprayed with a little cooking spray. I spray the chickpeas with a little spray as well so the seasoning sticks. Then I season and you can use whatever you like. I use pepper, garlic powder and paprika. Then you just roast at 400 degrees for 10-15 minutes until the chickpeas are crispy. Try to eat right away so they don't lose their crunch. Let me know if you try them!
