Things Are Changing!

Hey everyone! I hope you are all well. So, as of last night I'm officially signed up for Tough Mudder.


See, I got my badge and all ;) I won't lie, I had a mini panic attack when I clicked the submit button. I'm so not ready for this. But I'm determined to be ready for it in 160 days. That means more running, more strength training and eating for fuel. I am planning on starting off running on the rebounder, going to the treadmill, then hitting the streets and adding hills. For strength training I need to definitely just strengthen everywhere, but especially by upper body and shoulders. I have Brendan Brazier's book Thrive which I plan to read again this weekend so I can try and figure out how to properly fuel my body for increased training. I didn't waste any time and started with a 90 minute workout this morning :)


For my workout I did two routines from this Beach Babe DVD from the ladies at Tone It Up. I love their workouts so decided to get the DVD and definitely have not been disappointed! These workouts are tough!! I did the 20 minute HIIT the Beach workout (high intensity interval training workout) and the 40 minute Bikini Sculpt workout (full body toning) followed by 30 minutes of running on my rebounder. It was really tough on my shoulder and I'm really uncomfortable now so I'll have to figure out how to adjust but it felt good to get a great workout in to start the day!


I hydrated myself during the workout with this Vita Coco pineapple coconut water. This is the only brand of coconut water that I like so I grabbed a few when they were on sale.


After my workout I had a Blueberry Muffin Smoothie with protein powder.


My late morning snack was some of the best watermelon I've had in a long time! So sweet, yum!


For lunch I enjoyed some unfried rice. This one has peas and carrots, 1/2 cup brown rice, zucchini, onions and tofu. It is simply seasoned with a little tamari. It is SO delicious. It's even better than the first one I made because I got to eat it fresh which is always better than having to bring it with me and eat it room temp. So good!


My afternoon snack will be one of the raw cookies I got from One Lucky Duck! Can't wait to try this!

For dinner I'm going to pick up a chopped salad. I have VERY limited produce in my fridge, not even enough for a salad and can't get to the store until Thursday so I'm scraping things together until then. I'm planning on having some greens, carrots, cucumber, portobello mushrooms, sundried tomato and chickpeas in the salad :)

Working til nine tonight and I'm sure I'll be exhausted when I get home. I hope that you all have a great day today!

    1. Hi!! Thank you so much for stopping in, I'm so glad you enjoy the blog :) You should definitely try the unfried rice, it is so easy and so healthy! Just dry fry brown rice with your favorite veggies! Add some tamari and you are ready to eat!

  2. I have not had coconut water (yet), but the yoga studio I took classes at on Cape Ann had that brand for sale in a cooler. It's supposed to be really good for you. Coconut stuff is so popular now.

    Congratulations on signing up for the big muddy race. I'm sure you'll be ready for it in 160 days. Go Sarah!

    1. I've heard that coconut water is basically nature's gatorade and it is really good for hydration. I have tried a bunch of brands and haven't liked them but I can definitely drink this one.

  3. Hey what gluten free bread do you buy? a friend of mine is trying to find a tasty one that doesn't fall apart haha

    I love coconut water but I hate that brand! Tastes salty to me. I buy the big Zico ones since they are often on sale but lately I've been buying real coconuts.

    That's exciting about Tough Mudder! At least you have a lot of time to train. I tend to be slow with the obstacles, more so if they involve heights haha I don't like heights. The Warrior Dash was mainly these tall obstacles you had to climb up and down, so even though it was only 5K it took me 48min because I was very slow at the top of those structures! I feel ready for the 10K one, running wise, but figure the obstacles will slow me down some. If you can do a 5K obstacle race before the Tough Mudder, I'd recommend it. You'll feel more prepared.

    I got Insanity so I've put off getting Beach Babe since I know Insanity is 5x a week. But I do still want it eventually! I think the Pure2Raw twins are doing a review on it soon.

    1. Hey Sophie! I get Food for Life gluten free breads. My favorite is the Millet bread but I've tried the Brown Rice ALmond bread and it was good too. It is really dense and should probably be eaten toasted but the flavor is great!

      That is so funny because I can't drink Zico! I didn't get a salty flavor from it but I guess everyone's palate is different ;)

      I am really glad I have a lot of time to train. I am definitely going to see if I can get an obstacle race in before Tough Mudder. I'm not afraid of heights but my shoulder may be a problem but I'll just do the best I can. I'm definitely not going for time in Tough Mudder, just survival ;)

      The DVD is great but I'm sure you can just use the youtube vids to supplement the insanity dvds :)

  4. congrats on signing up for tough mudder! i did tough mudder last september, and i can honestly say it was one of the best experiences! it is insane, but it is so much fun!

  5. You're going to have such a good time at Tough Mudder. I'm sure it will be scary but exhilarating! You can do it!

    The watermelon at my Whole Foods looks so good. I think I'll have to pick some up this weekend. I'm in the mood for summer foods like watermelon, corn on the cob, potato salad, etc.

      I LOOOOOOOOOOOOVE watermelon! I am so with you on the summer foods, especially after I saw a mountain of corn in one of Ingrid's posts. Yum!

  7. I was literally just thinking about buying the Beach Babe DVD, but wanted to make sure it was a good investment. I am so glad you got it, and that it's a serious workout!

    I know you'll be ready for the Tough Mudder, you are so dedicated and this morning's workout proves it! Have you started physical therapy for your shoulder? I'm hoping it improves soon!

    Love all your meals, too! Fresh and healthy - the smoothie and watermelon are really vibrant. I need to try out your unfried rice soon!

    1. That's so funny! Yes the DVD is definitely no joke! Those girls are tough!

      Thanks! Sigh, no physical therapy it seems. My insurance company only covers it after hospitalization or post-surgery. My dr. is trying to figure out what to do.

      Thanks!! THe smoothie was delicious and refreshing after my gnarly workout, as was the watermelon. I LOVE watermelon. Definitely try the unfried rice, it's so good!

  9. Hey, very cool about the obstacle course run! I checked out the website; looks super intense! But, I know you're a dynamo, and you'll rock it!

    I took the "Are You Tough Enough" quiz on the site...seems like beer drinking is an important element...LOL...I'd be "tough enough" as far as that goes, but we all know that the beer part is a joke...you gotta be so fit to do that! I'd be useless, but you're super fit and healthy...you'll be awesome, and it'll be such a great life experience.

    1. Thanks Rose! It's going to be no joke apparently. Swimming in icy water, running through fire and live electrical wires. Who things of this stuff?! Ha!

      Lol yes I believe you receive a complimentary beer at the finish. I can't even drink beer. Too bad I can't request a celebratory margarita instead ;)Thank you so much, I'm nowhere near as fit and healthy as I want to be but I will get there in the next 5 months. I'm gonna own that course! ;)

  10. Where does the course take place? Good luck, Sarah. It's early for that but you will do fine, I'm sure. Like I said, one of my friends has done it before and while she's exercised on and off since HS, she's not as tough as you seem. And you have plenty of time to train.
    The food looks great today - especially the smoothie and rice dish.
