Quick Meals

Hey everyone! Hope all is well with you. Nothing exciting happening here today, just the usual work until 9. I slept a lot last night but still feel really tired. I'm going to focus on hydration today because I tend to get dehydrated at work and I know I didn't drink enough water yesterday. Hopefully that will help :)

I just have two boring meals to show you today. I haven't had time to make anything fun but that will change this weekend! I took Saturday off to have my dinner party with my friend and her fiance. I have a yummy meal planned but need to figure out dessert. Suggestions always welcome!


I woke up craving peanut butter so I decided to have some peanut butter, banana and cinnamon on some broken rice cakes. That's how I roll :) Served up with some delicious blackberries!


I made a big salad for dinner. This one has some spring mix, carrot, cucumber, raw corn and tomato from the vine. Dressed with balsamic vinaigrette.

Sadly that's all for now. I have some cleaning to do and some more relaxing to do :) Have a great day friends!

  1. Oooh, blackberries! I need to up my berry consumption because the window of opportunity is so narrow! Same goes for cherries! I love dinner parties - good luck figuring out the dessert!

    1. I know I'm trying to cram as many cherries and berries in my face as possible ;) That reminds me, I need more cherries because I ate all of mine in like 2 days. Oops!

  2. isn't it crazy how water can make or break how you feel during the day! i definitely need to drink more water --- i love your breakfast! i'm such a fan of peanut (well, almond) butter, cinnamon and bananas -- except no bananers right now -- basically I love almond butter and cinnamon together! haha jeez, I'm a piece of work! Good luck on your dessert hunt! Should be a fun dinner party for sure:) I love cooking for friends!

    1. I know! I will probably bring a coconut water to work with me too just because I'll get those extra electrolytes. I should drink coconut water at weddings, that'll probably help a lot! Aww I know I feel like I'm teasing you with all of the fruit and that's just mean! I hope you'll be able to add some fruit back to your diet soon. Thanks, I think I have an idea for dessert now :)

  3. So glad you had a restful night! Much deserved! You're definitely on to something with the water, especially during these hotter months, we all should be drinking more.

    Recently, I almost had rice cakes (broken, too!) with nut butter for breakfast! Too funny that you did! Ooh, raw corn in your salad sounds so good.

    Hmm. . .for desserts, I think you have to ask yourself if it should be baked or raw. And then go from there! I know whatever you choose, it'll be tasty. :)

    1. Thanks Ingrid! I definitely needed the sleep. I'm kind of bummed to work until 9 tonight then 10 hours until 9 tomorrow but it is what it is. I'm looking forward to spoiling myself on Friday with a hair cut and color and having the day off on Saturday.

      Breakfast was so good and exactly what I wanted! I can't wait for this salad!

      I'm so glad you brought that up because you are right and I decided to do raw and I came up with something super quick from there! I am making a sort of rich dinner (not terrible unhealthy but definitely heavier than I'd normall eat) so I'm thinking a nice light dessert would be best! Thanks for the insight! :)

  4. Just catching up on your blog here, and it sounds as if you had a busy last few days. It's good you're finally getting some rest. And some water. The meals may be "boring" but they're also really pretty. I'm loving all the berries in the store right now too!

    I know what you mean about hydration- if I don't drink enough water I end up feeling off. Hopefully it helps you!

    1. Thanks Gabby! Yeah I need to try and stay on top of hydration, especially if I'm working a wedding. I definitely don't drink enough water on the job! I have a pint glass at work that I drink from sometimes and I drank like 4 of them in addition to the tons of water I drank before!

  6. Salad looks delicious. I saw the first picture and thought, "I had bananas with my pancakes this morning too!" Oh well, rice cakes are... well, not as good as pancakes, but still great.

  8. How about a big old fruit salad? Or a berry tart? I actually want to make a clafoutis soon with the cherries around!
