A Day Late...

I totally meant to post this all yesterday but my friend called me randomly and asked if I wanted to hang out so I was out all evening and got home too late to dl the pics and put together a cohesive post lol.  So here it is, a day late but totally worth it.


Breakfast: A banana date shake in a mason jar (thanks to The Shenandoah Vegan for the idea!!). I had been out all morning running errands so by the time I got home I just wanted something to hold me over until lunch.

I spent some time cooking some yummy dishes which I enjoyed for lunch and dinner!


Lunch: A delicious new stir fry recipe that I tried.  It has some heat thanks to sriracha sauce and has shiitake mushrooms, tofu and bok choy.  I love bok choy and this dish was perfect with the pile of brown rice hidden under the veggies! I only used 1 tbsp of canola oil to cook all of the veggies and dry fried the tofu so it wasn't super oily, which I love. Check out the recipe here.

Snack: A delicious, sweet nectarine and a handful of raw cashews.


Dinner: As I was whipping up these chickpea croquettes my friend called and we made plans to do dinner at her house then enjoy the gorgeous summer night.  I told her I'd bring some of the croquettes and when I got there she whipped up this gorgeous summer ragout with onion, zucchini, baby broccoli, fresh corn and tomato puree.  It was an amazing, bright dish.  The croquettes had a nice flavor but they were dry...probably because of the chickpea flour with only a little bit of liquid.  Next time I'll probably add a little more oil or something but we added a dollop of hummus making them a trifecta of chickpea awesomeness and it really helped!

  1. The dinner sounds delicious. I wish I had a friend who called randomly and then gave me food! The bok choy with tofu and rice also sounds great. I have a lot of bok choy and rice leftover from the stir fry yesterday, so now I know what to do with it!

  2. The dinner was amazing! It was just funny that she called me while I was making the chickpea croquettes. She is a great cook and even though she isn't vegan she can whip up a veggie dish on the fly no problem. Her ragout was DELICIOUS. The stir-fry is one of my fav dishes I've had in a while. Really great heat to it, definitely give it a try, you'll love it!

  3. Interesting and pretty croquette recipe. I forgot you don't do gluten. You're welcome on the mason jar idea (Another plus is they don't break easily).
