Vega MoFo Day 9: Shortcuts and Chipotle!


Hey everyone! I'm sorry, I feel like today's post is going to be a bit lame but today is just that kind of day.  I just wanted to share a few things I found that will be great shortcuts for preparing meals! 

I think we pretty much all know now that I prefer to prepare my meals from scratch all the time, but unfortunately sometimes my schedule doesn't allow it. I found 2 great shortcuts though that I'm excited to share with you! They'll allow me to still have delicious, healthy meals in a pinch when I'm in a rush.


The first shortcut I found is this Garden Lites frozen veggie in sauce blend. It has zucchini, portabello mushrooms and eggplant in a tomato sauce. I thought this would be PERFECT to throw on some brown rice pasta when I'm in a rush but need a nice hearty meal with tons of veggies. I am excited to try this, I hope it will be good!


Yes, you are seeing correctly, these are pouches of baby food.  My niece had one last week and I just decided to randomly look at the ingredients and was happy to only see organic fruit and veggies on the ingredient list. I especially like that there are a few flavors that have fruit AND green veggies. Dontcha think that'll make fast green smoothies?! I rarely have frozen fruit in my house other than bananas and now it is getting past berry season so I thought that by blending a pouch of this puree with a frozen banana and some almond milk you'll have a quick smoothie! I think it'll also help me ease into green smoothies because I can NEVER get my proportions right. The ones above are spinach, peas and pears, broccoli, peas and pears, and an all fruit one of apple and cherry. I'll let you know when I try a smoothie :)




I FINALLY tried a Chipotle burrito bowl! I figured I'd show it to you untouched then after I dug in so you can see what I got in it. I chose the brown rice, black beans, fresh tomato salsa, guacamole and lettuce. It was actually much better than I thought it would be! My main concern was the cilantro...I'm one of those people that thinks cilantro tastes like soap and it looked like there was a LOT in there. I only got a strong cilantro taste in the few of the bites, it was mostly covered up. I still liked my burrito bowl from the other place I went to better because it had all those veggies, but this is definitely good in a pinch! I also liked that they offered brown rice.

Sorry for the random post! I'll be back with my interesting things (I hope) tomorrow! I'm planning on doing a post on body image next week I think. I've been toying with it for a while now and I decided that if I say it now I can't back out. It is a very personal thing but I think it is important.

    I would have never thought about using baby food in a smoothie. I can't wait to hear how that smoothie turns out. :0)
    The Chipotle burrito bowl sounds so good. One of these days I'm going to try one. Maybe I won't be disappointed when I finally get around to it.

  3. Michelle - I'll definitely keep you posted on all of these shortcut ideas! The Chipotle bowl surprised me because I didn't have super high hopes for it based on the cilantro situation but they make a solid bowl. Hope you like it when you do try it!

    Shen - I know! I was surprised I had no idea they had brown rice. Maybe it is new? It was good, I'm glad I finally tried it! Thanks for the inspiration :)

  4. Hooray for green smoothies!! If I can make one nearly everyday, and be satisfied - I have great confidence that yours will be a success. I am curious to know if you had any tasty dishes after the end of your fast!?! Enjoy the good weather!

  5. the brown rice is most definitely new. i was overjoyed when i went in there a few weeks ago b/c that was the only negative aspect i felt for chipotle.


    you should get the pico de gallo and the corn salsa on it next time b/c that makes it more veggie oriented!

  6. Baby food, that is hilarious! Actually, though, I remember my friend swearing by this one brand of applesauce and when I saw it, it was baby food! Haha. Hey, babies need their fruits and veggies too - preblended sounds like a great shortcut.

  7. Ingrid - Thanks for the confidence :) Fasts usually end on a carb overload so I just ate some carbs and a banana. Nothing crazy!

    Kimberly - I think I got the pico de gallo? That is the fresh tomato right? I was nervous about adding another layer of cilantro with the corn but next time I'll give it a try!

    FF - I know it is funny but it is just fruit and veg puree! I definitely laughed at myself for a while over it but I have a feeling it is going to work!

  8. Yeah, I don't like cilantro either. It just tastes funny to me. I end up at Chipotle often on the weekends.
