Vegan MoFo Day 4: This Is What I Ate



Hello everyone :) I figured that it has been a few days since I actually posted all of my meals for the day, so today would be a great day to do so because I think I had a pretty great food day.

Before I start, I decided over the weekend that my current eating habits just aren't working for me. Before I started my job almost 4 years ago, I was eating every 3 hours so about 5-6 small meals every day. My appetite and metabolism were regulated, I always had energy, I ate a wider variety of foods. Over all, I felt better. I've had to make adjustments to my eating habits due to my schedule now and it has not been the same. No matter what changes I make, nothing has made me feel as good as the 6 small meals a day way of eating made me feel. So now I'm going to try my hardest to get back to that schedule. It will take a lot of planning but I'm going to do my best!

Anyway, here's the grub!


First thing I did was start my apple cider vinegar regimen. I put it off for a bit but decided today was the day. I added one tbsp of raw apple cider vinegar to this mug of water and CHUGGED. I'm not going to lie, it was nasty! I didn't expect it to taste good but it just was really gross. I'm not going to give up on it though so I'll continue to drink it twice a day and see how I feel.

After the water I did a little workout at home. As a warm-up I did 5 - 1 minute rounds of jump rope with 30 seconds rest in between. After the warm up I ran for 30 minutes on my rebounder. Felt good to get moving first thing in the AM.


Sorry for the bad pic but my breakfast was a Pumpkin Chai Smoothie! Yes, I know it is green ;) Yesterday, Brittany mentioned that a pumpkin chai flavor sounds delicious and I couldn't help but agree! Since I had just worked out a protein shake would be perfect and I remembered my Vanilla Chai flavored Vega protein packet I had purchased to try. For the smoothie I simply blended a frozen banana, 1/3 cup pumpkin, 3/4 to 1 cup (I just used the rest of the container but I'm assuming that is how much was in there) of Almond Breeze and the Vanilla Chai protein powder. The powder provided sweetness and spice so no other add ins were necessary. The green color comes from matcha powder in the protein powder. It was so good and refreshing after the workout!



I ate (drank?) breakfast around 9 am and met a friend at Panera for lunch and caught up with her because it has been a while. I got a bowl of the black bean soup and an apple as my side (wah I wanted bread!). It was delicious, warm and comforting which is perfect because it is cold and damp and yucky here.


SHe also surprised me with this amazing birthday gift! She got me a copy of Hannah Kaminsky's Vegan Desserts! I've wanted this book for a while but never told anyone and she picked it up! I'm so excited, I can't wait to go through it. I'm thinking that a big holiday giveaway is going to happen so I'll probably end up including something from this book! Yay!

For a snack I had 1/3 cup granola with some almond milk. I used this granola...


I was so excited when I found it because it is so hard to find gluten free vegan granola (EVERYTHING has honey in it!). 


I especially liked the little side panel explaining why it is so awesome ;)


For dinner (meal 4?) I had a pile of roasted veggies and finally tried some of the guacamole hummus I got from Trader Joe's. It was really SPICY! I wasn't expecting that much spice but then I guess the serrano peppers probably would have that effect. It was pretty good but nothing super amazing. Delicious dinner nonetheless.

When I came home from work I had a small handful of almonds and another round of apple cider vinegar. Definitely going to take some getting used to.

  1. My dad used to drink vinegar everyday. (Does it feel like I'm always talking to you about my dad?) I'm at home so I could totally do the 6 meal a day thing...I've tried...and I'm going to keep trying. It's so hard, though, when I'm hungry to stop, then before I know it, I'm full. Too full to eat again until meal time. I think it was one of my New Year's resolutions, though, so I'd better get to workin' on that!

  2. The veggies with hummus looks really good! I would never have thought of guac hummus. I wonder how they keep it green.
    Also, that's awesome about the book! It's beautiful, isn't it? I've had it for a while but have yet to make anything out of it.

  3. Jenny - Aww lol it's nice to talk about your parents :) The 6 meals a day is really difficult, the trick is to plan your meals in advance and to try and space em perfectly. Most of my meals are 200-300 calories (give or take) and if I know one meal is a little heavier, I'll plan a 200 calorie snack as my next me (like a handful of nuts).

    FF - I know there is lemon juice in there which helps with the greenness, and prob some sort of preservative. I looked through the book as soon as I got home and it is absolutely beautiful and so many tempting recipes! I think that I need to make carrot cake ice cream before it gets too cold!

  5. What's the benefit of apple cider vinegar? Does it help with digestion or something?

    I eat every 3-4 hours, but I need to get better about planning my meals.

  6. What's the apple cider vinegar all about? I've read where it's good for you and good for weight loss, but why exactly are you doing it?
    I've been eating 5 to 6 small meals for a long time. That's the only way I know how to eat now...ha
    However, my eating habits have gotten off track since I've been trying to convert Tony. I've had way too much comfort type food! I don't have near as much energy either!

  7. Shen - LOL! It wasn't terrible but it isn't something I'd buy again. I'll stick to plain old hummus and fresh avocado...the way it should be.

    Sage - I'm really glad I decided to switch back to eating this way. I feel so much better. I'm going to do a whole post about apple cider vinegar this weekend since there has been so much interest in it!

    Michelle - I'll explain the apple cider vinegar this weekend :) I ate that way for a while and my schedule has just been too difficult to keep up with it...I finally decided that my feeling good is more important than a schedule. The cookbook is GORGEOUS!
