Back with a Vengeance!

Hey everyone! I'm totally committed to using my meals to help me feel better from this yucky illness I've been dealing with for over a week now. I woke up early and spent 2 and a half hours in the kitchen prepping and getting meals and snacks ready to bring to work. I've been trying to remain high raw and I think that I did a pretty good job. I'm posting my meals for the day that I've consumed and that I plan on bringing to work for snack and dinner tonight.

I went for the green smoothie again except I was ok with using fruit with a slightly higher glycemic index. Ever since I saw the recipe for the Cherry Vanilla Smoothie by Gena of Choosing Raw I knew I had to try it! You'll notice mine looked sludgy while hers is a gorgeous purple color, but I added a ton of fresh spinach to mine to up the green factor. I also used a scant cup of frozen cherries. I also decided to make it a cherry chocolate smoothie by using Chocolate Vega Protein Powder and for the record, it is the BEST vegan protein powder I've ever tried....and I've tried a lot! I'll definitely make this again! I also feel great now, I have a lot of energy and I love the green power from the spinach and those cherries add an antioxidant punch! 


I wasn't super hungry by late morning but I could tell by the Lose It! app that I needed more calories for the day so I toasted up a slice of GF Millet toast and added some almond butter and cinnamon to it. So delicious.


Not the prettiest picture but lunch was some brown rice pasta with lots of lightly steamed zucchini and broccoli. I topped it with a little sauce and some nooch. Very delicious!


For an afternoon snack I decided to go for an orange to keep the vitamin C flowing. Ideally this would have been my morning snack and the toast would be my afternoon snack but I'm eating this one at work so the toast wouldn't be doable then. Small concession but I think the vitamin C kick will help me get some energy to keep me going til dinner.


For dinner I made this gorgeous chopped salad. Half spring mix and half spinach, mung bean sprouts, cucumber, carrot, and sun dried tomato. I added my chopper to the pic because there has been some curiosity about what I use to chop my salads (that's for you Ingrid!). Very simple but it gets the job done! I'm also going to bring some Mary's Gone Crackers GF crackers to eat on the side. Another Lose It! inspired addition :) I'm hoping if I can make sure I stop coming in under calories that my energy will come back quicker too.

Hope you all have a great day! I'll be home after 9 tonight. Working until 9 a few days a week bums me out but I guess you have to do what you have to do.

  1. Wow, what a colorful, healthy day. That should definitely get you feeling better. I love the chopper! I just use plain old knife. :-)

    1. Thanks! I do feel better yet totally exhausted at the end of the day! This is good though because I sleep better :) The chopper is great, it does an awesome job!

  2. Yum yum yum. Your posts always make me hungry, I love seeing all the fresh colourful food!
    I hope you're bouncing back to health in no time- it's been long enough.
    You mention the lose it app- I'm trying to work out what to use on my android phone and was wondering if you'd suggest it? why did you chose it over the other options?... I've been thinking about using cronometer but there are so many!

    1. Thanks Claire! :) I agree, it has been long enough! I guess all I can do is pump my body full of nutrients and be patient!

      I definitely suggest using the lose it app! I think it works great. I had seen other bloggers using it so I decided to check it out. I think it is really easy to use and it really keeps me on track for the day. I know exactly where I stand at all times and how much I need to eat for the rest of the day. Check it out! I think it is a free app so you've got nothing to lose!

  3. What's with this Lose It! app thingy? You're the 2nd blogger I know who mentioned it. Is it a calorie counter or something?

    1. It is a great app that helps you track calories consumed and also calories burned. They help you figure out how many calories you need to consume in order to reach a weight loss or maintenance goal. It is really easy to use and when I can remember to use it I love it :)

  4. I had so much trouble finding foods that Lose It! recognized I finally bailed.

    Hope your super foods make you feel better.

    That 'chopper' on top of your Salad looks like a little toilet seat.

    1. The newest version of the app has a barcode scanner which recognizes everything with a barcode! It is such a great feature and it makes everything so much easier to record. I also use the recipe function for meals and recipes I eat often to make it easier to pop it in as well.

      Ha! I don't think anyone would ever want to sit on that chopper!

    Chocolate-spinach-cherry. . .hmm. Ha, ha! I'm glad you found a smoothie combo you like! I always feel energized after drinking them, which is why I consistently have them.

    1. No problem!! I took pics without it and then I remembered and just tossed it in :) It is a very simple little chopper but it works so well.

      The chocolate was the strongest flavor for sure, it was SO GOOD! You didn't taste the spinach at all but you know that because you are a green smoothie connoisseur ;)

  6. The chopper is awesome, I didn't realize you used a special tool for yr salads. makes sense though; they look great. I've seen them before and they look fun!

    1. It is so fun!! Definitely a great way to take out some aggression ;) It chops up a whole salad in about a minute or less so it is really a great tool, especially for $6!!

  8. You certainly sound pumped. As I've said before, I'm not a big fan of raw foods so I sometimes have trouble eating salads, but I think chopping them might make them easier for me to eat. I hope you continue to feel healthy and happy!

    1. Thanks! Honestly I was never a fan of salads until I started chopping them. I think the flavors mix much better and It breaks down the raw veggies a little but. I definitely recommend giving it a try!
