Some Clean Eats!

Hey everyone! Today was a great day here :) I woke up and had a delicious, filling breakfast. Digested a bit then did 45 minutes of intense cardio at the gym. I am so excited because my next three training sessions are going to be doubles! An hour and a half of butt kicking, I'm so stoked. I probably wouldn't do three doubles in a row if I wasn't going to miss a few training sessions the week after next. I'm going to visit my best friend in Florida from February 9 - 13! I can't wait, but I won't be training for a while because of it so I'm getting some hardcore sessions in first.

After the gym I did some laundry and then relaxed for the rest of the day. It was the perfect way to spend a Sunday :)

Here's the grub I ate today!


For breakfast I had a bowl of oats with raisins, coconut, walnuts and cinnamon. Super delicious.


Post workout protein shake! I decided to listen to the suggestions offered by all of you and made a delicious shake out of almond milk, a small banana, a tbsp of almond butter and some Vega chocolate protein powder. It was delicious!


For lunch I had this yummy plate of carrots, stuffed grape leaves, sun dried tomatoes, hummus and some Mary's Gone Crackers in the caraway flavor.


For an afternoon snack I had an orange and the very last of the strawberry scraps from the sandwich cake. So yummy.


Dinner was this gorgeous chopped salad. Mesclun greens, sun dried tomato, carrot and a half of a perfectly ripe, creamy avocado. Super simple but super delicious.

It is really amazing how much good clean food you can actually eat. I feel like I've been eating all day and I'm still a bit short on calories. I'll take care of that when I make some air popped popcorn with sea salt later to snack on while I watch some crappy Sunday night TV :)

I know sometimes it looks like I don't consume enough calories in a day. However, I'll use today as an example. Overall I consumed 1,700 calories today within 6 meals/snacks. That is a lot of food for not a lot of calories. My exercise made my net calorie intake a bit lower than that but still leaves me within a healthy amount for my daily calories. Tomorrow will be a challenge with my double training session but I'll figure it out!

  1. I need to follow your lead and eat more smaller meals throughout the day...I usually do green juice and breakfast, then a fruit snack and nothing until dinner. I'd rather eat more earlier in the day than later.

    Anyway, all the food looks amazing. I love how you toss sun dried tomatoes in your meals so often; adds pizzaz and flavor!

    What do you dress your salad with?

    1. It isn't always convenient to do smaller meals but I find that it is what works best for me! I'm like you, I prefer to eat more in the beginning of the day but I find spreading it out has really helped keep my appetite stable.

      I LOVE sun dried tomatoes! The funny thing is I used to hate all thing tomato! I don't know where the change occurred but now I love them. Oops I always forget to write it but I dress my salad with balsamic vinaigrette.

  2. Some days it doesn't look like you get enough calories but today was not one of those days. It was one of those days we all aspire to. Great job!

  3. Where / what kind of sun dried tomatoes do you purchase? The salad is simply beautiful, almost too lovely to eat! Almost. :)

    So glad you found another winning shake combo! It's like drinking a dessert that's good for you.

    1. It is actually funny, I get my sun dried tomatoes from the Asian market close to my house. I used to just get them at my grocery store but they were so expensive! I get a half pound for $2.35 at this market now which is great!

      I think I'm hitting my stride with these smoothies :)

  4. I get exhausted just reading about your workouts! That's smart to get some intense training in before your trip. I never seem to workout when I'm on vacation.

    I'm interested to see what yummy foods you eat in Florida. It could be a new series: "This Is What I Eat...On Vacation!"

    1. I can't wait for my trip! We usually go to a few vegan restaurants when I visit and I usually cook a nice meal and dessert for one night. I'll definitely make sure to take pics of everything so I can give a full report when I get back!

    How do you make yr oatmeal? It always looks so good and creamy.

    1. Lunch was really delicious! My oatmeal used to be dry and clumpy but now that I've started adding my oats to the water first and then bringing it up to a boil together and simmer until it gets to the consistency you like. It's sooooo good!

  8. Fruits and veg make such attractive plates, don't they? Your lunch looks very similar to the hummus platter (that I pay money for!) at a Mediterranean restaurant near here.
