Happy Friday!!

Hey everyone! Happy Friday! I hope that you all had a good week and I'm sure all of you are excited about the weekend like I am :) Sorry I didn't post yesterday, I was running around in the morning getting ready for my appointment with the spine Dr. and just didn't get to take photos. After work I had the gym so it was just a busy day all around!

Obviously I don't have answers just yet about what is happening with my shoulder, back and neck but it seems like this Dr. is actually interested in trying to figure it out, which is incredibly refreshing. A snippet of  what he told me: "Whatever it is, it's strange. It was strange in the beginning and it is still strange. But we will figure out what it is (I had actually seen him once two years ago for the same problem but went to a neurologist after...who did nothing)." This was so refreshing to hear since I've been trying to get answers for three years and it seems like I finally have someone on board with me. Oh and the icing on the vegan cake was that they took me in to the room 5 minutes early and the appointment started exactly on time. I don't know about you but I'm usually waiting at least a half hour past my appointment time at a Dr's office. So that was awesome. I felt really good when I walked out of there. I am going to have an MRI done on my neck and we'll take it from there. Just waiting for authorization :)

So today was business as usual. Started off at work then I ran some errands then I went to the gym and did 45 minutes of cardio. I also ate some pretty awesome food. Check it out!


Breakfast was a "green" smoothie. Not green but had lots of greens. It had frozen banana, frozen blueberries, almond milk, Vegan Shake & Go Vanilla Almondilla and lots of spinach. Very delicious.


Late morning snack was an AMAZING mango! I've never had fresh mango before (just frozen) and OMG it is so delicious. I'm glad I decided to pick one up to try.


I thought I would take a picture of the carnage because it looked hilarious. These were the results of the Friday Mango Massacre. I know there are more civilized ways to eat it but I don't care. It was fun being all messy :) Thank goodness no one was around!


For lunch I ate this amazing snacky plate. It had carrots, celery, tomato, home made gluten free tortilla chips and lots of hummus. Delicious!

Post workout I had a protein shake. Then after my shower I ate seaweed snacks to hold me over until dinner.


Dinner was a big, beautiful chopped salad. Yum!

Forgetting Sarah Marshall just came on FX and will lead right into The Ultimate Fighter Live which is pretty much my perfect night :) I'm cuddling up into bed and I see some air popped popcorn in my future.

  2. Sounds a really positive experience with the doctor! I'm so glad a solution is in the works. Hopefully the MRI will be approved soon!

    I really want to like fresh mangoes, but I had one once and it was not good. I can handle mango salsa and frozen mangoes. However, a messy fruit can be fun - makes me think of ripe peaches!

    Lunch looks fantastic, as does the salad! Did you have it without a dressing? After a bit of a break from hummus, it's back - and I'm inspired to make a plate like yours.

      Wow, I wonder if you just had a bad mango? It was fun to be a little messy ;) I'll probably be eating these through the summer. It was so sweet and delicious.

      My standard salad dressing is balsamic vinaigrette. I love it so it is what I use 9 out of 10 times and it's what I used last night. The hummus plate was awesome and so fulling!

  3. Hope you and the doc can get to the bottom of the back problems. You're lucky to have found a supportive doctor!
    Fresh mango is fantastic but there really is no easy way to eat it neatly, haha. I'm usually bent over the kitchen sink.

    1. Thanks! I just hacked mine up and ate it right off the skin. Then I may or may not have eaten around the pit too ;) So good.

  4. Mango is one of my favourites and yes, it is messy haha You can buy a mango slicer but I never have. I find if you slice it into piece you can then slice off the skin and eat those pieces...seems to be the easiest for me.

    All of this looks so delicious! I'm planning on breaking my juice cleanse tomorrow night with some veggies and a raw dip (maybe juice pulp hummus or zucchini hummus...we'll see!). Mmm.

    1. Thanks for the tips :) I pretty much did just that, cut it into slices and then just ate it right out of the skin. Can't be bothered by more cutting, ha! It worked out well and was so delicious. I wish I would have gotten another! Next trip for sure.

  6. Terrific about the doctor appointment! Hoepfully the MRI gives you an answer and I'm jealous that you got in early. That never happens!

    I love fresh mango. Have one sitting in my fridge right now, waiting for me to make a mess of it. I can never cut them up neatly.

  7. You're so "strange," Sarah! I'm glad your doctor seems to be listening to you and working to figure out what's going on. Having a good doctor makes a huge difference. Good luck!

    I love the mango carnage. :) I was looking at the mangos at Whole Foods today, but I got grapes instead. I like eating frozen grapes on really warm days.

    1. Haha! Yeah he said the whole shoulder situation was weird and I agree with him. Hopefully the MRI will show something because if it doesn't I am truly stumped.

      I LOVE frozen grapes. It is such a good treat with no guilt!

  8. Hey sorry I was MIA last week. I hope you had a great weekend. It looks as if it started off with some great food, although I have to admit the smoothie looks a little scary. ;-)

    Good luck with your shoulder, back and neck problems. My mom has been having back problems for the past year and had all kinds of shots and stuff that didn't help, but last week I went with her to a chiropractor and he thinks he can help her. Like your doctor, he seems to have a positive attitude. Good luck to you!

  9. My husband and I LOVE mangoes! Except our favorite is a kind called Ataulfo. They're completely yellow, almost orange, and smaller than the regular mango found at the store. I recommend you try one!

    The salad looks beautiful, by the way :)
