Monday Fun Day

Hey everyone! I hope you all had a great Monday! It is gorgeous here today, a little brisk but the sun is shining. Gotta love a little vitamin D boost :)

Today was my last double session for a while. It went well, was tough as usual but felt pretty good! He must have a sixth sense or something because he had me do a little bit of jogging on the treadmill today ;) We just alternated 2 minutes of walking and 2 minutes of jogging for a bit because I was already 25 minutes of pre session cardio down and 45 minutes into my session but it felt pretty good. Maybe I just went back into running too quickly the last time I tried it and I should just start with intervals and work my way up. I am happy that he made me start up again and get into it slowly because I'm confident that I can work my way back up again.

I ate some pretty awesome food today. Check it!


For breakfast I had a Blueberry Muffin Smoothie. Mmmm.



Late morning snack was some cantaloupe and pineapple. The cantaloupe was a bit disappointing but the pineapple made up for it!


A big beautiful salad for lunch. This one had greens, carrots, cucumber, grape tomatoes, and some leftover grilled portabello mushrooms. Instead of dressing I topped my salad with a big ol' scoop of hummus. It was soooooo good!


For a pre workout snack I had some seaweed sheets (omg I'm addicted to these!!) and...


some homemade trail mix with cashews, apricots and dried apples. Perfect energy boost for my workout!


This dinner was pretty much the star of the day. I dumped some spaghetti squash, lightly steamed zucchini, spinach and sauce in a saucepan and heated it. I added extra black pepper (which added some nice heat), garlic and some nooch. Such a phenomenal dish, and so easy!

That's all for tonight. I'm going to spend the nice resting and watching The Voice :) Typical Monday. I plan on going to the gym early tomorrow to get a good workout in on my own. I don't know what I'm going to do yet because I have to see how I feel after tonight's session but I would like to start with HIIT (high intensity interval training) on the treadmill but I'll see how my legs feel.

  1. Is it just me or do you enjoy your personal training sessions more when the personal trainer is male? Anyway, Spaghetti Squash? Is it fall again already?!

    1. Haha well 3 of my 4 trainers have been male. I wasn't a huge fan of one of them. I like the female a lot, we are actually friends, but the style of training doesn't match what I like to do :)

      It certainly feels like fall!!

  2. Seaweed sheets? I've never had them, but now I want to try them!

    Dried apricots are so good. I haven't had them forever and am going to crave them now. Yum!

    Your dinner looks like a gourmet meal, but it sounds like it was nice & simple to make. Perfect!

    1. OMG they are sooooooo good! I got them from Trader Joe's , they are like 10 calories for the whole package and packed with goodness. I ran out but when I get more I'll take a pic of the package for you.

      I was never a fan of dried apricots until recently . I only eat 2 at a time because they are very sweet but I cut it up into pieces and it is perfect!

      Awww thanks! It was SO easy to make, it was done in like 7 minutes. So delicious.

  3. You might have inspired my morning smoothie with that pineapple!! Speaking of smoothies, is this the raw one you created or the one with overnight oats? Such a gorgeous color!

    The spaghetti squash meal sounds absolutely delicious!! Can you believe I've never tried it?!

    Love your plan for running! Intervals truly are the best way to get back into it. Have you tried any of the Tone It Up workouts? I subscribed to their site now, thus I envision one of their workouts tomorrow. . .

    1. Haha yeah! Pineapple is so good! This was the one with overnight oats. I only use 1/2 cup of blueberries this time and the color was lighter but still so pretty!

      OMG you must try spaghetti squash! It is so good! I recommend preparing it this way, it was amazing!

  4. I love all the little snacky things you included today. Especially the pineapple! Since the engagement brunch, I have REALLY been wanting some. Do you buy the fruit whole or pre-cut?
    Beautiful dinner too. Get the squash in while you still can.

    1. Haha thanks! I'm trying to really commit to eating a little bit every 3 hours so hopefully the snacky bits are here to stay :) The pineapple was so sweet and amazing! I buy the whole fruit. I used to take the shortcuts but it is just so much cheaper to go for the whole thing.

  5. DOES look like a good food day. I had a disappointing cantaloupe yesterday. And I do also really like seaweed snacks.

  6. What a happy sounding Monday post! :-) Hummus instead of salad dressing is great; I tried it once and it really works well. The way you prepared your spaghetti squash looks delicious. I assume you had to cook the squash by itself first, right?

    1. Haha thanks Jenny :) The hummus was such a great change, and such a good substitute for people that prefer creamy dressings (which I actually don't I prefer vinaigrettes). Yup, I cooked the squash on Sunday so I just had to toss it in the pan to heat it up with the sauce and the rest of the veggies.
