Random Tuesday

Hey everyone! I hope you had a great Monday! Mine was ok, just a bit busy so I didn't have a chance to pop in. My training session went well, my flare up is calming down and I had a lot more strength in my shoulder. I'd say it is at about 70% which is way better than it was last week, so hopefully a few more days and I'll be back to my regular ass kicking self :)

I have a few fun things to share so lets check it out.


Take a peek in my oven! I made a huge batch of kale chips today. There were two more trays after these. Simply seasoned with sea salt and garlic powder. Yum!


For dinner tonight I'm bringing some sesame tofu, roasted eggplant and onion and some cucumber tomato salad.

I guess that is all for now. My appetite has been a bit weird the past few days but I'm going to try and get back on schedule tomorrow. I'm still planning on try the Vegg stuff soon so stay tuned for that review within the next few days!

    1. Haha it's not all that much exciting stuff, just one exciting thing and the rest is more annoying. My friend had her baby on Easter so that has been exciting but otherwise the usual work and running around and Dr. appts that is just sucking so much time out of every day.

  2. Terrific that your shoulder is feeling better!

    I should really make some kale chips for the pups. They love them! I'm not a fan of them, but enjoy making them. Plus, my dehydrator is just taking up space right now....

    I hope things calm down for you soon. Hectic days get old!

    Chris said he'd try kale chips if I made them. We'll see... This is from the guy who won't eat broccoli, so I'm skeptical.

  4. What a relief that your shoulder flare up is improving! What do you think helped it?

    I love the shot, "peeking" inside your oven. The kale chips look absolutely fantastic! I still need to thaw out a package of rice tortillas, in order to try making my own chips.

    Is dinner from the hot bar at WFs? I haven't had anything from the bar in a while, but your eats look yummy!

    1. I suspect the anti inflammatory meds have been helping the most, although I'm pretty much out of them so that's not so great.

      haha glad you liked the kale chips pic, I hope you like the homemade tortilla chips. I'm craving them so much, can't wait for Passover to be over!

      Yup I grabbed a quick dinner from the hot bar at WFs. The eggplant was really good! Made my life a little easier :)

  5. Dinner looks good, but I'm quite enamored with the kale chips. I so want to try these. I think it's definitely worth it to make your own because I think they're much less expensive that way. I have seen some recipes online that include nutritional yeast also, and that sounds good. I hope you are enjoying them! :-)

    1. Thanks! I agree, making your own is the way to go. They are just way too expensive at the store. I was going to add nooch to mine but decided to go simple for the first batch. I am enjoying them, thanks!
