I'm trying to be good about planning my meals and I think I've put together a pretty good day of food! I'm bringing 4 of these 5 "meals" with me to work since I'll be there all day so it takes a lot of prep and planning but it'll be worth it when I have enough energy to sustain me through the day!
For breakfast I had a banana with some raw buckwheat cereal and almond milk. So delicious and super filling!
Late morning snack will be a red plum.
For lunch I made a homemade Chipotle bowl. I put the homemade guac separately and I'll add it to the brown rice, beans and salsa after it is heated.
For my afternoon snack I'll have a Pure bar.
Dinner is another tofu scramble, this one with a more green hue. It has onion, spinach, broccoli and zucchini and is seasoned with salt, pepper, garlic and nooch. I have been eating more tofu recently than I normally would but I desperately need to get to the grocery store. Hopefully tomorrow!
I hope you all have a great day! Any suggestions of fun, healthy things I can make this weekend to last for the week? Also, I would love some suggestions for healthy snacks that I can bring with me, especially high protein snacks. Thanks!!
Sounds like a delicious day! that plum is just GORGEOUS! i love stone fruit:) and those pure bars are so great. hmm, a foods that last -- well there's always soup :), orrrr a healthy muffin made with almond flour! Way to plan! 2 more days until the weekend!!!

DeleteThe tofu scramble and the rice bowl both look fantastic! I should make homemade Chipotle bowls...I love Chipotle, but the only one in Memphis is about 20 minutes away from my house.

DeleteDelicious looking meals! I know what you mean about tofu - it's like once you open the package, you make a commitment to up your soy intake for a few days / week. I've not tried freezing it, but I've heard it's possible.

Recommendations: VaVaBars, trail mix with walnuts or cashews (just since I see you've used almonds in your cereal - something different?). Or perhaps a raw ball:

ReplyDeleteFoods that will last...you can always make some raw/no bake bites with dates and nuts and whatever other flavours you'd like to add! Or make up a batch of hummus with some raw veg? And you could always cook up a batch of a grain to have on hand for quick dinners!

DeleteThanks for the suggestions! I'm definitely making a big batch of quinoa for the week. I need to figure out portable, non-refrigerated meals and snacks for days that I work that will hold up in the heat. It is so hard being out for 12ish hrs in blazing heat and not being able to keep food cold!

Yum, the chipotle bowl looks really good. When I make food for the week that needs to be quick and easy I cook up a batch of quinoa and then roast some veggies or sweet potatoes. Pack them up with some fresh greens and any dressing or sauce. High protein snacks? I need help with those too :)
ReplyDeleteI could totally go for some roasted veggies and I'm going to Whole Foods tomorrow so i'll have to grab some veggies to roast while it's not quite so oppressively hot here. I'll let you know if I find any good high protein snacks!

DeleteMaking muffins is a good idea for something to last through the week, and muffins are portable. You could also make soup and freeze individual servings to bring for lunch or heat up at night. Soup might be a better idea for cold weather though, unless you make a chilled soup like gazpacho! A good snack idea is nut butter packets - like Justin's - they're portable, tasty and high in protein.
