Pack it up!

Today is my long day at work (11-9) so I packed up lunch and dinner to bring with me :)

Check out the grub that will be consumed today!


Breakfast: Bowl of oats with 1 tsp each of walnuts, raisins and shredded coconut.  2 tbsp flaxseed meal and some cinnamon.  Really great combo!

Unpictured intended midmorning snack: Iced coffee and cantelope


Lunch: I'm really excited about this one! 1/2 cup each brown rice and kidney beans mixed with a handful of spinach and 1 tbsp salsa.  Topped with grilled portabello slices and onion.  Will be topped with avocado when I eat it.


Dinner: Typical stir fry seasoned with 1 tsp tamari, pepper, garlic and some nooch.

  3. I'm not going to lie, that lunch was AMAZING. It was so easy to make I definitely recommend it! And it is so healthy!
