Vegan MoFo Day 19: WTF Wednesday and an Award!


First I would like to start off by thanking Michelle of lovinlivinvegan and Brittany of Brittany's Veg Kitchen for nominating me for the Liebster Blog Award. The award is meant to help boost support for blogs with under 200 followers and I really appreciate the support ladies!  Like most others I didn't know what Liebster meant but have come to found out that it is German for "beloved" or "dearest" but can also mean favorite. OK, so now let's check out some meals for today. It is so gross and rainy outside I wish I could just stay home and drink coffee and watch stupid movies. Instead I'll work until 9 so I was up early and prepping meals to bring with me. I'm listening to the rain pelt down as I type. Yuck.


For my first meal I wanted to finish up the other half of the avocado I started yesterday before it got brown and gross so I split it up between 2 slices of gf toast. Noms.

My second "meal" is going to be some coffee and a banana that I pick up by work.


For my third meal I decided to make some pasta. 1/3 cup (dry) brown rice pasta with steamed broccoli and zucchini and sauce topped with a little sprinkle of nooch.


Dinner is a simple meal of roasted chickpeas, roasted brussels sprouts and a big ol' carrot. Mmm.

Hope you have a great Wednesday!! P.S. that awesomely affordable and delicious deli by my job...sells 2 oz packets of chia seeds! Why didn't I see this before spending $12 on a bag of chia seeds I'll probably never get through! Eek!

    Your pasta looks yummy. I've see rice pasta and quinoa pasta, but I haven't tried it yet.

  2. Mmmm...everything looks yummy, especially that pasta!
    I bought a big container of chia seeds a while back and just had to throw half of them out, because they were way past their expiration day....ugh. I'm going to be on the hunt for a much smaller container of them now.

    I am really enjoying your choice of foods today. Every time I see you use an avocado, I think about how I need to pick some up!

    I was looking for chia seeds the other day, guess now I'll look where I least expect them (such as a deli!).

  5. Sage - Yay no problem! Love your blog...I'd say it is a cross between a lifestyle and advice blog? And thanks! I've had more success with the brown rice pasta, especially cooked slightly al dente!

    Michelle - Thanks :) OMG it is so annoying to have to throw anything out, especially something so expensive! It drives me nuts!

    Ingrid - No problem! And thanks :) I am totally obsessed with avocados recently as you can see. I couldn't believe they had the seeds, especially that cheap!

    FF - No problem! haha, I know Isobelle is a popular lady. But then again, when you make raw Snickers bars you kind of deserve a million awards ;) The avocado definitely brightened my morning, it was so good and still super fresh!

    I buy chia seeds in - maybe 5 pound bags? I order them online and keep them in the freezer. So the 2 oz. thing is funny to me. :)

  7. Yum-mee! I haven't had pasta for almost a year! That picture is making me so hungry for it now. I see gluten-free pasta all of the time too.

    I pay $9 for an 8oz bag at my local health food shop, but I don't really know if that is a good price or not. I go through a lot of them.

  9. Jenny - No problem! I don't use chia seeds very often so even my 16 oz. bag is kind of big. I'm gonna put it in the freezer though! Great idea!

    Isobelle - Try brown rice pasta, it is really good! If you go through the seeds a lot I bet you can get them cheaper wholesale? No problem, I love your blog so THANK YOU for all of the amazing recipes!

    Shen - Lol glad you like it! I think you should print it out and somehow make it appear in all of your food photos. Just as a reminder :)
