Vegan MoFo Day 3: Pumpkin Pie for Breakfast and an Award!


So I had a pretty rough work weekend. It has taken a little bit of a toll on my mood but I'm pretty excited to have a training session tonight so I can get a little aggression out. I was also really happy to see the great response to my last post about the super cute food related gifts I've found! :) That definitely helped to lift my spirits.

Something else that helped lift my spirits was my amazing breakfast of Pumpkin Pie! OK not really pumpkin pie ;) But I made a super healthy breakfast that mimicked pumpkin pie and it was really delicious and comforting so I thought it was the perfect first recipe post of MoFo! Check it!

Pumpkin Chia Pudding Pie!

1/4 cup pumpkin puree
1/2 cup favorite plant milk (I used unsweetened vanilla almond breeze)
1 tbsp chia seeds
generous sprinkle of pumpkin pie spice
1 tsp maple syrup
1 tsp of vanilla extract
Sweetener to taste (I added a little bit of stevia)
1/4 cup favorite granola

Combine all ingredients except granola in a bowl (make sure there is a little room for the seeds to expand). Let the mixture sit at least one hour so the seeds soak up the liquid.  I left mine overnight. When you are ready to eat, sprinkle granola over top of the pudding. There's your pie crust!

*I made this recipe without the stevia but had to add it because it wasn't quite sweet enough for me. You can always up the maple syrup if you prefer. I also used 3/4 cup liquid but found it wasn't thick enough so I would recommend 1/2 cup*

1. I have 3 tattoos and can't wait to get more! I have one big piece (cherry blossoms in wind across my upper back) and 2 small ones (skull and crossbones on the inside of my foot and hibiscus flower on the back of my ankle).

2. I have a weird obsession with plaid. I love it!
3. I am very low maintenance and I'm not super girly. I do, however, have my moments...like when I got these shoes...

4. I went to graduate school in Seattle. I have an MA in Communication.
5. I spent 3 weeks backpacking after I graduated college. I went to London, Dublin, Edinburgh, Brussels and Paris. It was an amazing experience.
6. I didn't get my driver's license until I was 25. I was terrified of driving!
7. My idea of a perfect day is getting under the covers with a cup of tea or coffee and watching silly movies.

    The pumpkin chia pudding also sounds great. I don't know why I haven't thought to do that.

    I probably won't do the questionnaire, heh, but in the spirit of tats/piercings: I have six tattoos and had my lip, nose, and ear cartilege pierced all before I ever got my ear lobes pierced! They're all out now, though except for the nose ring - but I do have three holes in my lobes.)

  2. Woo hoo! Awesome facts about you. I'm scared of driving too. It's because I think I'll get lost, crash into a ditch, and a family of hungry grizzly bears will eat me before anyone notices I'm missing. OK, that's a bit of an exaggeration, but I'm still worried about getting lost. :(

    When do we get to see a picture of you wearing the sexy skull shoes?

  4. FF - I didn't think a lot of you guys would be into answering but I figured I'd give it a whirl ;) And thanks!! THe pudding was yummy :) The granola adds a perfect crunch! That is awesome, I'm jealous I want more tattoos! I used to have my nose pierced but was allergic to the jewelry and had to take it out. I have 5 piercings, all in my ears...but not my earlobes! I want to get another one but can't see spending the cash on it now.

    Sage - Thanks! I get concerned about getting lost too but I just don't have patience for driving. Haha I'll have to find a good occasion to wear my shoes and I'll post a pic!

    Brittany - I used chia seeds which is different from chai spice but you are right, pumpkin chai DOES sound great...in fact, I think you just inspired tomorrow's breakfast! I'll post it tomorrow night!

  5. Shut. Up. Dessert for breakfast?!?! Then, you went and made it pumpkin! YUM! I'm officially buying a can of pumpkin (too lazy to do it the old fashioned way) this weekend. I'll make this, and the smoothie!

  6. I love that the granola is the crust! Sounds great...I've yet to make a chia pudding, I really need to try one.

    It's fun to get to know more about you. I learned to drive at 16, but never had a car to drive until I was 42...go figure. Anyway, I think it's good to be cautious about driving. People don't take it seriously enough sometimes.

    Thanks for the award...I love reading everyones' answers and I love the spirit in which they're given...and it's so fun to find new blogs through them, but I always feel a little uncomfortable about the passing it on part. I'll see what I can come up with, but would you be ok with me passing it on to just one or two people instead of 15?

    Rose - Chia pudding is good, I have yet to make just a plain one though. I think that is next on my list. I'm going to use it as a yogurt replacement in parfaits I think...Of course you can pass along to as many or as few as you like! Like I said, I would love to see random facts about everyone (I wrote a list of 100 somewhere, I think it is really fun and a great way to learn about people) but I don't expect everyone to do it. It isn't for everyone so definitely just do whatever feels comfortable for you!

    I really love reading all of these new things about you too. I'm kind of iffy on doing the question thing, I think.
    But I don't have any tattoos. And I have my ears pierced..haha! I do have two piercings in one ear though. Except that was kind of an accident. Yeah, I'm boring.

  9. ooo, interesting. i love chia pudding so much, i bet i would love pumpkin added. thank you for passing your award on to me! i'll participate. i have no tattoos; i'd be way too freaked out! yours is pretty, though. i got my drivers license the morning i turned 16. and i'm jealous of your backpacking trip. can't even imagine a day under the covers, watching movies. although it sounds heavenly.

  10. First of all- that pumpkin chia pudding looks ah-mazing! I'm obsessed with pumpkin! I love your tattoos too! Thanks for including me on the list of bloggers you'd like to know more - I'll most likely do that questionnaire after Vegan MoFo (I have so many recipes I have to make!). But I will reveal that I have tattoos also! I have the big dipper on my foot, and a design my sister and I came up with on my back. I've also been to Brussels and Paris - but would love to visit Dublin. Which city was your favorite?

    Jesse - Thanks!! Awesome, I'll gladly wait for the answers if it means I get to see new recipes in the meantime! ;) Dublin and Edinburgh were phenomenal. The people were really amazing, super nice and accommodating. Paris was amazing...I wasn't expecting it to be one of my favorites because I'm not into the whole fashiony Paris kind of thing but it totally blew my mind. Such an amazing city. But Dublin and Edinburgh are definitely more my style.
