Vegan MoFo Day 5: WTF Wednesday!



Happy Hump Day! I'm especially excited about today because I have this whole weekend off and I'm planning some serious relaxing time! Working til 9 today so I'm posting all of my meals now. Still trying to eat every 3 hours and I've had my third apple cider vinegar drink this morning. I'm being totally serious, I can already feel a huge difference in the amount of energy I have.

Check out the meals.


For breakfast I had 1/3 cup of granola with some almond milk and a sliced banana.


Midmorning I will have a sliced apple for a snack.



For lunch I am going to have some brown rice pasta (1/3 cup dry) with the last of my roasted veggie mix (onion, zucchini, mushroom and eggplant) with some sauce. I added a little nooch to it this time, you can see the yellowy flakes on top :)


My dinner will be a half of an avocado, a carrot and the last of my roasted cauliflower and brussels sprouts.


I roasted up some chickpeas for my last "meal" of the day. I don't want to eat a big meal late so I decided to make the last one snack size and I'll eat this protein snack when I get home from work...right before I have my second round of apple cider vinegar drink. 

Hope you all have a lovely day! I'm glad it is going to get warmer today! I don't do well in cold and it was getting pretty chilly out.  Let's keep winter away as long as possible!

  1. I'm interested in this whole cider vinegar concoction - I've been lacking energy lately, and it may be the boost I need!

  2. It is just 1 tbsp of apple cider vinegar in 8 oz of water. I drink it twice a day. Look up "health benefits of apple cider vinegar" and you'll find tons of reasons to at least try it! It isn't a pleasant drink...the first one was the worst but it is getting better as I am getting further into it.

  4. yummmmmmmm, I love the way you eat! Everything always looks so fresh and healthy and delicious. Makes me hungry every time I stop by :). The roasted chickpeas sound great.

  6. Oh, I just noticed you don't have any coffee like Shenandoah Vegan said. I know I should cut back on caffeine too but it's so hard!

  7. YUM...you have some great food going on today.
    I'm so big on my food and drinks tasting good that I don't think I could do the apple cider vinegar thing...maybe I should put Tony onto drinking it though...yeah...lol
    I do NOT like that cold either! I freeze!!!!

  11. How about we exchange weather patterns? :) It's been in the mid 80's for several days (mind you, it's snowing in the mountains, so at least the ski resorts will be ready to roll). I'm ready for some coolness!

    The meals look lovely! So excited for you to have a well-deserved weekend off. :)

    Nikki - Thanks! It was a long road to get to this way of eating but I love it :) I definitely recommend the roasted chickpeas!

    Shen - I'm still drinking caffeine but much less than I used to and I'm going to slowly cut it down more until I'm on decaf...I like the taste of coffee too much to stop drinking it altogether.

    Sage - I did have coffee just forgot to post it though :X I'm only drinking one small in the morning which is a huge cutback from the large in the morning and large at night I used to drink! Been subbing the night cup with green tea!

    Michelle - the taste of the apple cider vinegar drink is rough but the way I feel makes it work the 10 seconds of yuck lol. I brush my teeth right after I drink too...to protect the enamel on my teeth but also to get rid of the taste lol. I'm REALLY sensitive to cold!

    Isobelle - the only thing I can say is if you do try it, definitely give it more than one chance. The first time you drink it is really gross but after it gets better.

    Rose - Thanks! Today was a good food day :)

    Jenny - Thanks! I think so too, I can tell by whether or not I'm hungry and today seemed to be pretty steady and I had lots of energy after a 10 hour day of work.

    Ingrid - It warmed up a bit today to 70 but is still cool in morning and night. And thanks! I'm excited too, it has been so long since I've had a whole weekend!

  13. The pasta looks great. I roasted some vegetables today and wanted to just throw everything in! Is the brown rice pasta mushy?

  14. The brown rice pasta is actually really good. I cook it on the shorter end of the time suggestion and it maintains a great texture...the only time it gets a little mushy is after being reheated which tends to happen to pasta in general. I have had better results with brown rice pasta than quinoa pasta. Give it a try!

  16. I think people tend to overcook brown rice pasta, which is why they don't like it sometimes. Al dente! I'm trying to eat little meals today; wish me luck!

  17. Ah good luck! I agree, I only cook my brown rice pasta for 7 minutes and it comes out great!
