Yummy Tuesday!

Hey everyone! I'm finally back with a full day's worth of food, including one amazing treat (which is actually pretty nutritious!).

Check out what I made with the carrots I bought yesterday...

Isa's Carrot Cake Pancakes from the PPK site!! I made mine gluten free by using oat flour and added the suggested walnuts.

So naturally it is no surprise that for breakfast I had...

Instagram pic of my pancakes with blackberries. I ate my pancakes with the tiniest bit of Earth Balance Coconut Spread (I'm talking 1/4 tsp between the two) and 1 tsp of maple syrup. HOLY YUM! These things are SO delicious you must try them. They are also probably the healthiest pancakes I've ever eaten with the oat flour substitute.

Lunch was spicy fat free refried beans in a brown rice tortilla with 1/2 avocado. I tried to get a new angle of it today :)

For snack I'm bringing an orange with me to work. Such. A. Citrus. Freak.

I made another stir fry to bring for dinner tonight. This one has brown rice, broccoli, zucchini and tofu. This is going to be delicious!

So that's it for today! Working 2-9 then hopefully get to relax for a bit. I feel like I've been running around cooking all morning! Hope you all have a great day!!

  1. I'll have to check out that PPK recipe!

  2. That pancake recipe sounds great! With berries, too? That's a perfect breakfast. :)

The rest of your food looks fantastic and I bet you're looking forward to having that stir fry. I should would be!

  3. Yummy Tuesday, indeed! You'd be so proud, I had another orange and more avocado today. Ha! :) Those carrot pancakes look so amazing, and I love everything on the PPK site - so good!!

  4. Brittany - Definitely check it out! SO DELICIOUS!

Molly - Perfect breakfast indeed! It's funny I actually read your comment as I was eating my stir fry. It was really yummy.

Ingrid - Yay! Seems like we were on the same page today! I agree, the PPK site is full of winning recipes!

  5. Mmm, healthy pancakes! I love making them healthier, because then I can still eat them for breakfast without feeling icky. What could be better? :) P.S., I'm totally a citrus freak too. Oranges and grapefruit are among my favorite snacks (and juices!) ever. Delicious.

  6. Oh the pancakes sound great! I must have missed that recipe. Love all your other meals too. I've been picking up a fair amount of citrus too but for some reason they haven't been so tasty lately.

  7. What a colorful and delicious array. I like the sound of those pancakes...when you said you had a recipe in mind for the carrots...pancakes would never had entered my mind.

  8. Everything looks very delicious, and the pancakes with the berries make a pretty plate. I like oranges, but I usually don't buy them because I'm very picky and have gotten some mediocre ones. You know, like ones that are too dry or have too much pith? Maybe I should try again. I usually have pretty good luck with clementines and with those tangeloes with the bump on top.

BTW, I took a picture of my avocado sandwich yesterday, and I'll be posting it. ;-)

  9. Very impressive food day. Thanks for the link to the Pancake recipe.

  10. Allysia - THe pancakes were so delicious and I definitely didn't feel icky after! I wish I liked grapefruits but I have to stick with oranges. I prefer sweeter than sour I guess :)

FF - A google search brought me to that recipe. I'm so glad it did because it is an amazing recipe (although all of their recipes are amazing!). Your oranges haven't been good? Mine have all been pretty sweet and juicy but it is the worst to get a bad orange because they are SO ANNOYING to peel...to make that effort and then have a yucky one definitely stinks.

Rose - Thanks! I had a feeling most people wouldn't have thought of pancakes when I said that ;) I like to surprise you!

Miss Rachel - Thanks! I try to pick oranges that are heavy for their size...I guess I figure it may have more juice that way? Did I hear that somewhere once? Your avocado sandwich looked SO GOOD!

Thanks Shen! No problem, I hope you give it a try, it is really good!
