Typicalish Tuesday

Hey everyone. Just putting up a quick post before work since tonight is one of my late nights. Today is a pretty awesome day as far as my meals go. I've had a great morning too. I woke up a dragged my butt to the gym to get some cardio in. After my cardio I spent some time prepping my snack and dinner to bring to work with me. Eating a high raw diet is very time consuming, prep work is always long. I don't mind on the weekends but spending a long time before work is kind of tedious. After that I was able to watch the UFC on Fox press conference live on YouTube. It was in NYC and I would have liked to have gone but I would never have made it home in time for work, but watching it on YouTube was fine :) I'm excited about this fight which is free on Fox in May, one of the headliners in Nate Diaz and the Diaz brothers are my favorite fighters so it's going to be awesome :)

So anyway, here is what I have eaten so far and have packed up to bring to work with me.


For breakfast I made a new spin on this Blueberry Muffin Smoothie recipe I found a while ago. Here is my new recipe:

1/3 cup gluten free oats
1 1/4 cup Almond milk
generous dash of cinnamon
1 cup frozen blueberries
1 serving Vega Vanilla Almondilla Shake n Go Smoothie powder

1. Soak oats with 1 cup almond milk and cinnamon overnight.
2. Blend the overnight oats with blueberries, Vega powder and additional almond milk. Enjoy!

Isn't that color stunning? It tasted exactly like a blueberry muffin! And I still got the two servings of greens, some omegas and probiotics from the powder. The healthiest muffin I'll ever eat ;)


For lunch I had this hearty, amazing quesadilla type thing. Brown rice tortilla, 1/2 cup spicy fat free refried beans, a generous portion of spinach (perfect addition!), a scant 1/4 cup Daiya cheddar topped with avocado and tomato. Ridiculously good.


For snack I'm bringing some grape tomatoes and carrots with hummus.


Dinner is yet another chopped salad.

    Your smoothie is such a gorgeous color. Love it! The tortilla creation sounds really good. I'm very hungry right now and would mow into that if I could!

    1. I know, especially when they involve fighters you actually are really excited to see ;) AND they are in NJ so maybe I can figure out a way to get there.

      The smoothie was so beautiful and so delicious. I did mow that sucker down, that thing was gone FAST! Best quesadilla I've ever made.

  7. What a delicate straw inside your beautiful smoothie! Is it smaller or is the mug just huge? I accidentally put too many blueberries in the last one, and it definitely made the smoothie darker!

    Love the tostada/quesadilla! Looks delicious!

    Also, nice work on the cardio and I'll have to check out the Diaz brothers. :)

    1. The mug is actually just ginormous. I like oversized mugs for smoothies and tea. I couldn't believe the color when it was done, I didn't want to drink it because it was so pretty. And then I did drink it and I didn't want to stop ;)

      The quesadilla was ridiculous. The spinach made a huge difference. It was just barely wilted from residual heat and SO GOOD.

      Thanks! :) Warning, the Diaz brothers are quite polarizing with their personalities. Nick Diaz is my all time favorite fighter and he has a bit of a grudge with GSP who I know you seem to fancy ;) They are amazing fighters though and I actually have found their personalities to be endearing when you look past the bad assness.

  8. I'm not a smoothie person, but the color of the blueberry muffin smoothie is beautiful. This will sound weird, but it looks like a cool color for a manicure or pedicure. ;-P

    The "amazing quesadilla type thing" looks delicious, and I love your new cherry blossom plate - very pretty and spring-y.

    Sorry I've been away from your blog for a while. I'll try to visit more regularly from now on. It's important to be regular - ha!

    1. Trust me, you'd love this smoothie! It is like a blueberry muffin in liquid form. And that is so true, I could total see myself rocking this color on my nails! My current nail color is actually pretty close to it ;)

  10. 1) I'm going to try that blueberry muffin smoothie! But with the flavorless Vega becuase I just bought so many cases of it at Whole Foods (IT'S ON SALE!!!!!!), and 2) I love your chopped salads. A lot. And now I'm craving one. But that would require a walk to the grocery, in the cold.

    1. Yes, definitely try it! If you are using unflavored Vega I suggest using a little vanilla extract. The vanilla vega added a lot of flavor and helped it taste more muffiny so I think a little extract may help. Aww lol thanks, the chopped salads are a staple here, I have the same ingredients for it on hand all the time :)
