WTF Wednesday!

Hey everyone! Happy Hump Day! I'll be very happy when today is over since it is my long day at work. I started off my day by taking some time to prep my meals, make homemade walnut butter and come up with a new smoothie (which means you all get another recipe!). A pretty productive day so far and it is only 9:20 AM!

I woke up this morning feeling a bit tired and wanted a bright and sunny smoothie to wake up me and to bring a little sunshine in to the day (it is a gross, gray day here). Check out this gorgeous smoothie!


I'm calling this my Good Morning, Sunshine Smoothie! It was so delicious and definitely brought a little cheer to my day :) Here's the recipe!

Ingredients:
1 small frozen banana
5 fresh strawberries
1/2 cup frozen pineapple
3/4 cup favorite plant milk
1 serving vanilla protein powder*

Directions:
Blend all ingredients and enjoy!

*I always use Vega One protein powder because it has my greens, probiotics and omegas included. No need to add spinach unless I want an extra green boost!


For lunch I'm having a hummus plate including stuffed grape leaves, 2 farmer's market pickles, 2 carrots all sliced up and some hummus. This is going to be so good!


As I mentioned I whipped up a batch of Gabby's Banana Date Walnut Butter! I am going to have it as my afternoon snack with a sliced up gala apple. I'm bringing the little container with me but threw the mason jar with the rest of the batch in the photo. I only made a half batch because I only had 1 1/2 cups of walnuts. I tasted a bit of it (how can you resist) and this stuff is amazing! I also had to substitute some agave for the dates because I used all of mine up in the VaVaBars. I used 1/2 tsp because I didn't want it to be overwhelming with sweetness and it is perfect! Great recipe Gabby!

I realized I haven't updated you guys with my pantry challenge situation! I've been doing amazing with it, really dwindling down my pantry and using up lots of grains, beans, nuts/seeds, dates, etc. I'm really happy with how well that has been going!

I also decided to add an item to my summer list and that is to add tags to my 400+ posts. It is a daunting task but I feel like it should be done! Hopefully I'll be able to make some progress with it :)

  2. Your smoothie looks SO superior to the one I'm eating right now (yes I'm having breakfast at 11:30am, lol - late night jamming), and so simple! And I've considered the idea of tags (I think about half my posts have them), and it's totally daunting. But then, you have nearly double the amount of posts as me, so have fun with that! :)

  3. Your lunch looks adorable--like a Japanese Bento Box! I'm jealous, too, that you snatched some pickles from your farmers market! I could eat pickles until I'm blue in the face...or green!

    1. Thank you! Lunch was by far my favorite meal of today. The pickles were so delicious! Farmer's market pickles are the way to go!

    1. This nut butter is amazing! It literally took all of 10 minutes. The walnuts broke down really quick and the banana made it so creamy!

  6. Good luck with your tagging. 400 is a lot of posts! I like using tags because it makes it easier for me to find old posts later, but it is kind of a pain to rememebr to tag everything.

    We've been doing a modified pantry challenge too. I got Chris to try quinoa again (progress!).

    1. Thanks lol! It is really hard for me to remember to tag but I think once I get through all of these posts I'll have it thoroughly stuck in my head to tag as I go!

      Pantry challenges are fun! How did he like the quinoa? I didn't like it at first now I LOVE it!

  8. Yum! Love all of your eats today! The name of your smoothie is perfect, I love all of the ingredients - it's like a banana split in a glass! Still jealous of those gorgeous pickles. I think I have everything to make the walnut butter, it sounds so good.

    Wow! I don't even know how to do tags, so I'll be paying attention to see how you did it. :) I hope today went quickly for you!

      WHen you are writing a post you'll see an option on the side to add labels. Just write in new tags or click on tags you've already used! I have done like 15 posts so far, ha!

    1. Ha! I basically just used all of my cleanse friendly pantry ingredients! I was able to get rid of a lot of grains (quinoa and rice especially), nuts, seeds and beans. I also used up my dates and unsweetened shredded coconut. I just keep buying all of these things and wouldn't eat them enough so now I've been focusing on these clean foods that I have anyway!

  12. I've been trying to put more tags on my photos in Flickr, which has been pretty daunting. I'm glad I did it, though, and I'm sure it'll be worth it for you when you do it on your posts.

    I'm going to go bookmark the walnut butter right now. WANT!

    1. I got through a little over 100 posts last night! I'm going to try and get most of them done tonight. I'm not doing them with much of a system :X but it'll work for now I guess!
