Planning Ahead

Hey everyone! I hope you all enjoyed your Friday and are having a great start to the weekend! As you all know, I'm on day 2 of a 3 wedding weekend so I decided to theme today's post on planning ahead. I've been struggling with this for a while now but I paid extra attention to it this week and I think that I'm headed to success! Now, not only am I just planning meals, but I also have to plan around eating what I have since I won't be home enough to really go through a lot of my produce. I kept this in mind while I went to Whole Foods Thursday night and went light on the produce haul. There is nothing worse then buying gorgeous produce then not getting to it in time! Now I know exactly what I have and have planned my meals accordingly.

So of course there was some menu planning involved. Ideally I'd have a book so I can just write everything down but until I can get one I just used a blank sheet of paper and wrote down my meals for the next three days. I included Monday since I won't have time to on Sunday and I don't want to get stuck on Monday! The goal is that I just don't have to think when I'm super busy, everything will be right in front of me. It will also help me get nutritious meals in me without having to reach for convenience.


My dad is really awesome and got me a ton of cherries! Of course the timing isn't great and I won't be around to eat them that much so I pitted them, stuck them in snack sized baggies and put them in the freezer! Cherry chocolate smoothies here I come! I still have a ton of fresh cherries left to snack on so we'll see if I have to add another bag or two to the freezer :)

You all know what a smoothie looks like so I'll just show you my AMAZING lunch from today!


Before I show you my lunch I just wanted to show you these gorgeous baby roma tomatoes I picked up from Whole Foods. They are perfectly ripe and so delicious and they are much smaller than they look. You better believe they made an appearance in my lunch!


Inspired by Ingrid's beautiful tofu scrambles, I made myself a spinach and tomato tofu scramble! I seasoned it with salt, pepper, garlic and some nutritional yeast. This was the PRFECT tofu scramble. Super fresh and so delicious. I served it with avocado and in true Ingrid style, a brown rice tortilla. Best meal I've had in a really long time! And a perfect, hearty meal to power me through my second long day!

  2. You go girl! Way to plan ahead! So important when eating healthy! Those cherries are incredible! what a great dad:) and what a lunch! oh my gosh, i'm craving that right now!! haha I thought of you today cuz I'm at a wedding! I saw the ceremony in a whole different light, looking at it from a photographer's point of view:) haha have a great night!

    1. Thanks Caralyn! The cherries are REALLY good. He definitely spoiled me :) Haha nice, I hope you had a good time! I'll never be able to look at a wedding from a guest's point of view again. Believe it or not I've never just been a guest at a wedding. I've either been a bridesmaid (5 times so far, going for number 6 next year) or working (at least 100-150 weddings at this point) :)

  3. WOO HOO! I'm so glad you enjoyed the tofu scramble, it looks fantastic. How did you like it with the brown rice tortilla? I find them to be so sturdy and tasty for scooping. I'll have to pick up an avocado and try one with it sometime!

    I often plan out meals when I know I'll be pinched for time - they always help! Everything sounds so good! Oddly enough, I have finished my frozen cherry stash (but have two bags of blueberries - they wouldn't be good with chocolate protein powder!). Time to get some more, as that smoothie is so good.

    What kind of trail mix do you have / make?

    I hope the remaining two weddings go smoothly, and that their vegan friendly fare is tasty!

    1. The scramble was AMAZING and I loved it with the tortilla! I'm totally converted, that's how I'm gong to be eating it from now on for sure! The avocado was a great addition to add some creaminess :)

      I am glad I froze these cherries because I haven't been happy with the frozen ones I've bought from the store recently. I know that these cherries are delicious and the resulting smoothies are delicious as well :) The blueberries would be yummy with vanilla protein powder, like berries and cream kind of :)

      I made a home made trail mix as part of my friend's birthday gift and put cashews, almonds, peanuts, dried pineapple, papaya and cranberries :) I had some leftover so I'm bringing it with me today.

      Thanks! I'm not going to lie I'm really tired. I got home after 1:30 am last night and didn't get to bed until after 2 by the time I downloaded my card and got my batteries up to charge. Woke up at 7. Yikes!

  4. Great idea to do some meal planning! Looks like you've got some super meals- I love how healthy everything sounds :)

    Lucky you getting all hose cherries! Very smart on pitting them and freezing them. You have some mad patience! And those tomatoes are too cute :)

    That tofu scramble is gorgeous :) All the colours are so bright and fresh!

    1. Thanks! OMG pitting cherries is the worst! I got a cherry pitter for the task but it still took so long. It's so worth it though! The tomatoes are amazing!

  6. Good for you on planning ahead. I am so enjoying all the beautiful produce in Whole Foods these days. Those tomatoes and cherries are gorgeous. Where did your dad get the cherries?

  7. Lots of enthusiasm for water, ha ha! :) I'm a big list person too - not only for food, but life in general. Without them I feel all lost and disorganized! And tofu scrambles are SO DAMN TASTY. Oh man. I want.

    1. LOL the big bold "water" was so I drink it. I get very dehydrated when I work because I'm outside in 95 degree heat with no water for hours so I just make sure to emphasize to drink as much water as I possibly can. I love lists too. Definitely the Virgo in me. I have a little notebook in my bag so I can make lists whenever I want, as well as multiple list making apps on my phone. The scramble was amazing!
